Betsy's Brussel Sprout Chopped Salad Recipe Brussel sprouts are the comeback veggie of the century!  That’s right! Every chef is placing these once forgotten sprouts on their menu.  Now you can enjoy them at home with Betsy’s delicious Brussel Sprout Chopped Salad recipe. After tasting this salad you’ll ask “Why does this recipe taste so good?” Well, it is no longer a secret. A Betsy’s Best Gourmet Nut Butter takes this recipe over the top! Brussels Sprout Chopped Salad Ingredients

  •  2 hard boiled eggs, peeled
  • 1 pound of Brussels sprouts, shredded
  • ⅓ cup toasted walnuts, chopped
  • ½ cup dried or fresh cranberries
  • 1-2 ounces goat cheese, crumbled

 Dressing Ingredients

  •  2 tablespoons apple cider vinegar
  • ¼ cup olive oil
  • 1 teaspoon honey
  • 1 tablespoon Betsy’s Best Cashew Cardamom Butter
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic, minced
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper, more if needed

Recipe Instructions Chop the eggs into tiny pieces. Place in a small bowl and set aside. Make the dressing by placing apple cider vinegar, mustard, garlic, Betsy’s Best, salt and pepper in a jar and stirring with a fork to combine. Add the olive oil to the jar, cover tightly and shake the jar until everything is well combined. (You could also do this in a blender or in a bowl.) Add the toasted walnuts, cranberries and half of the chopped eggs to the Brussels sprouts and drizzle with the dressing. Gently toss until combined. Let the salad sit at room temperature until the sprouts slightly soften and the flavors combine, about 15 minutes.Toss the salad again to redistribute the dressing. Taste and season with salt and pepper as needed. Transfer to a serving dish, top with the remaining eggs and crumbled goat cheese.

White Bean Turkey Chili with Cardamom Cashew Butter

Chili Ingredients:

2 T Betsy’s Best Cardamom Cashew Butter

2 clove garlic, minced

1 lb lean ground turkey

1 (4oz) can green chile peppers, chopped

1/2 T ground cumin

1/2 T dried oregano

1/2 tsp ground cinnamon
ground cayenne pepper to taste

2 (15 oz cans) cannellini beans, drained and rinsed, separate 1/2 c

2 c chicken broth

1 c shredded Monterey Jack cheese

Step By Step White Bean Turkey Chili Recipe Directions

Step 1: In a large pot over medium heat, combine the onion, garlic and ground turkey and saute for 10 minutes, or until turkey is well browned. Add the chile peppers, cumin, oregano, cinnamon, cayenne pepper to taste and white pepper to taste and saute for 5 more minutes.

Step 2: Add 1 1/2 cans of the beans and the chicken broth to the pot. Take 1/2 c beans with the 2 T Betsy’s Best and puree them in a blender or food processor. Add this to the pot along with the cheese. Stir well and simmer for 10 minutes, allowing the cheese to melt.

Step 3: Enjoy your white nean turkey chili!!

Peanut Butter Banana Popsicle

Summertime weather is here, and as the temperature increase cool treats beat the summer heat! We love these healthy frozen banana pops for a delicious treat that is not only healthy, but fun to make with kids.

bananas, peeled and cut in half
3 T Betsy’s Best Gourmet Peanut Butter
2 T coconut oil
1 c of toppings such as: Cocoa Krispies, shredded coconut, sprinkles or cacao nibs
8 popsicle sticks

Place popsicle stick in the base of the banana that was cut in half. Put bananas on wax paper on a cookie sheet and place in the freezer for at least 2 hrs. In a small saucepan, add Betsy’s Best and coconut; on low heat melt oil and Betsy’s Best together. Remove from heat. Place toppings individually on its own plate. Take bananas from the freezer and dip one at a time into Betsy’s Best mixture, then roll in topping and place back on wax paper. Once finished with each banana store in freezer in an airtight container and enjoy!
