Kickin' Cauliflower Roast
Cauliflower is making a comeback and while this cruciferous vegetable usually consumed raw or steamed, roasting makes for a unique dish. Consume as a side or turn into a snack, you will find this recipe keeps you coming back.
- 1 head cauliflower, cut into bite-sized pieces
- ¼ cup Betsy’s Best Gourmet Peanut, Almond or Seed Butter
- 2 Tbsp nutritional yeast
- 1 Tbsp hot water to thin (if needed)
- ½ tsp sea salt
Preheat oven to 350°F. Whisk together Betsy’s Best, nutritional yeast, water and salt. Toss with chopped cauliflower. Spread cauliflower on baking sheet. Roast 35-45 minutes.
