Simple Asian Slaw Recipe
This is not only a simple coleslaw recipe but one of Betsy’s favorites. The flavor of this slaw is absolutely to die for and a family favorite. It is a great side dish, but often we will add shrimp and kelp noodles and create an entree.
- 1 ½ cup shredded carrots
- 3 cups shredded purple cabbage
- 1 scallion, chopped
- 1/3 cup cilantro, chopped
- 2 Tbsp red-wine vinegar
- 2 Tbsp raw sugar
- ½ cup Betsy’s Best Gourmet Peanut, Almond or Seed Butter
- 2 Tbsp oil
- ½ tsp sea salt
Stir vinegar and sugar in large bowl until sugar dissolves. Whisk in Betsy’s Best, oil and salt. Toss with cabbage, carrots, scallions and chopped cilantro.
