Smoked Salmon Wrap

Betsy has created another healthy appetizer recipe, a smoked salmon wrap. The best appetizers are the ones that are not only easy to make but taste great!  This gluten-free coconut Nori wrap makes it easy and the cardamom cashew butter makes it pop!  What a great combo and one your friends and family will love!

Wrap Ingredients:

3 T Betsy’s Best Cardamom Cashew Butter

2 Coconut Nori Wraps from Wrawp

6 oz smoked salmon

3 T cream cheese

T2 T dill, chopped

2 T chives, chopped

Step By Step Smoked Salmon Wrap Recipe Directions:

Step 1: In a bowl mix together the Betsy’s Best Cashew Butter with Cardamom and the cream cheese. 

Step 2: Stir until combined and then add the dill and chives. 

Step 3: Spread 1/2 on one wrap and the rest on the other. 

Step 4: Add 3 oz of the smoked salmon on the end of the coconut wrap and do the same for the other. 

Step 5: Starting at the end with the smoked salmon, roll the coconut like a sushi roll and allow the cream cheese to seal the wrap at the end. 

Step 6:Slice with a sharp knife into sushi sized rolls and serve.  You can garnish with additional chives and dill.

Step 7: Enjoy your smoked salmon wrap!

Cinnamon Sweet Potato Fries

Betsy’s cinnamon sweet potato fries are the perfect side for summer grilling. After all, what is a better combination than sweet potato and cinnamon? These sweet potato almond butter fries are to die for, and you can’t stop at just one! Feel good as you fill up with the perfect combination of protein and healthy carbs. Loaded with vitamin A, fiber, and the goodness of chia with keep you coming back for more.

Ingredients:

3 T Betsy’s Best Cinnamon Sunflower Seed Butter

1 large sweet potato, sliced like fries

1 tbsp. sunflower oil (or canola)

1/4 tsp. cayenne pepper

1/2 tsp. coarse kosher salt

Black pepper, to taste

Step By Step Sweet Potato Fries Recipe Directions:

Step 1: Preheat oven to 400°F.

Step 2: Line a cookie sheet with parchment paper (to avoid mess).

Step 3: In a small bowl, whisk together Betsy’s Best Cinnamon Seed Butter, oil, salt and peppers. Set aside.

Step 4: Put sweet potato strips in a medium bowl and pour liquid mixture over top. Use spoon or hands to coat each potato strip.

Step 5: Transfer sweet potato fries to cookie sheet, spreading them out to allow for even baking.

Step 6: Bake 15 minutes, then remove pan and use a spatula to flip the fries. Bake another 20 minutes.

Step 6: Remove pan and flip one more time. Bake 5-10 minutes – until fries are slightly crisp.

Step 7: Enjoy your cinnamon sweet potato fries!

Recipe Ingredients:

1/4 Cup Betsy’s Best Cinnamon Peanut Butter

1 head cauliflower

2 Tbsp nutritional yeas

1 Tbsp hot water to thin (if needed)

½ tsp sea salt

 

Step By Step Recipe Directions:

Step 1: Preheat oven to 350°F.

Step 2: Cut cauliflower into bite-sized pieces

Step 3:Whisk together Betsy’s Best, nutritional yeast, water and salt.

Step 4: Toss with chopped cauliflower.

Step 5: Spread cauliflower on baking sheet.

Step 6: Roast 35-45 minutes.

Step 7: Enjoy!

Simple Asian Slaw Recipe

This is not only a simple Asian slaw recipe but one of Betsy’s favorites. The flavor of this slaw is absolutely to die for and a family favorite. It is a great side dish, but often we will add shrimp and kelp noodles and create an entree.

Ingredients:

1/4 C Betsy’s Best Cinnamon Almond Butter

1 ½ cup shredded carrots

3 cups shredded purple cabbage

1 scallion, chopped

1/3 cup cilantro, chopped

2 Tbsp red-wine vinegar

2 Tbsp raw suga

2 Tbsp oil

½ tsp sea salt

Step By Step Asian Slaw Recipe Directions:

Step 1: Stir vinegar and sugar in large bowl until sugar dissolves.

Step 2: Whisk in Betsy’s Best Cinnamon Almond Butter, oil and salt.

Step 3: Toss with cabbage, carrots, scallions and chopped cilantro.

Step 4: Enjoy your satisfyingly healthy salad!

Cardamom Cashew Butter Hummus

Betsy’s cardamom cashew butter hummus recipe will have you wondering why you ever bought hummus at the store!  Forget the traditional tahini and go creamy with cashew butter as the secret ingredient.  This high protein dip is not only filling but full of flavor and the hint of cardamom spice is so nice! #TasteTheDifference!

 

Ingredients:

1/4 Cup Betsy’s Best Cardamom Cashew Butter

2 (15.5-ounce) cans no-salt-added chickpeas (garbanzo beans), rinsed and drained

1 garlic clove

1/2 C water

3 T fresh lemon juice

2 T extra-virgin olive oil

3/4 tsp salt

1/4 tsp black pepper

Preparation

Step By Step Cashew Butter Hummus Recipe Directions:

Step 1: Place beans and garlic in a food processor; pulse 5 times or until chopped.

Step 2: Add 1/2 cup water and remaining ingredients; pulse until smooth, scraping down sides as needed.

Step 3: Enjoy your homemade cardamom cashew butter hummus!

Apple Stuffing With Almond Butter Glazed Sweet Potato

Move over Thanksgiving turkey, this sweet potato almond butter glazed apple stuffing is going to steal the show! The recipe is not only unique, but a healthier version of traditional stuffy stuffing. It is loaded with flavor and nutrition thanks to apples, sweet potato, and all-natural cinnamon almond butter. #TasteTheDifference!

Ingredients:

2 Tbs Betsy’s Best Cinnamon Almond Butter

2 large sweet potatoes

2 Tbsp grapeseed oil (or coconut/canola)

1 ½ cups chopped raw onions

½ cup diced celery

½ tsp sea salt

¼ tsp black pepper

2 cups chopped apples

½ cup water

¼ tsp ground cinnamon

¼ tsp ground nutmeg

2 cups bread crumbs (use 4 slices whole wheat or gluten-free bread, toasted and crumbled)

½ cup low-sodium chicken broth (or water)

Step By Step Apple Stuffing Recipe Directions:

Step 1Wash potatoes and leave skin on. Dice in large chunks.

Step 2: Transfer potatoes to pot with enough water to cover potatoes. Bring to a boil.

Step 3: Reduce heat and simmer until tender (20 minutes). Drain.

Step 4: Mash potatoes in a large bowl.

Step 5: Heat oil in large pan on medium-high heat. Add onions, celery, salt and pepper.

Step 6: Cook, stirring often, for about 5 minutes. Add apples, Betsy’s Best, water and remaining spices.

Step 7: Continue cooking and stirring for 3-4 minutes.

Step 8: Stir mixture, then add the chicken broth and bread crumbs into bowl with sweet potatoes.

Step 9: Use stuffing as is, or place in lightly oiled 9x9 baking dish and bake at 350°F for 20 minutes, or until golden brown.

Step 10: Have a happy and healthy Thanksgiving!
