Honey Mustard Almond Butter Dressing

Kick your salad up a notch with this delicious honey mustard almond butter dressing. Your salad is missing this, your carrots want to be dunked in it, and your chicken is praying for a marinade this good! This Honey Mustard Almond Butter Dressing recipe is so versatile, you’ll find yourself making it on a weekly basis.

Dressing Ingredients:

3 T Betsy’s Best Cinnamon Almond Butter

3 Tbsp water

2 Tbsp freshly squeezed orange juice

1 Tbsp stoneground mustard

1 Tbsp olive oil (or flax/almond oil)

½ Tbsp raw honey

¼ tsp sea salt

½ tsp garlic

1 Tbsp chia seeds

Step By Step Almond Butter Dressing Recipe Directions:

Step 1: Puree all ingredients in blender except for chia seeds.

Step 2: Add chia and stir by hand.

Step 3: Store in airtight container for up to 2 weeks in the refrigerator. 

Step 4: Enjoy your almond butter dressing and salad!

Yields 1/2 cup.

Quinoa Avocado Salad with Cardamom Cashew Butter

2 T Betsy’s Best Cardamom Cashew Butter

1/2 c uncooked quinoa, rinsed and drained

1 c water

1/3 c diced red onion

1/2 c fresh spinach, shredded

2 Roma tomatoes, seeded and finely chopped

2 T lemon juice

1 T olive oil

1 ripe avocado, halved, seeded, and chopped

1/3 c crumbled feta cheese

spinach leaves for salad

Step By Step Quinoa Avocado Salad Recipe Directions:

Step 1In a 1-1/2-quart saucepan combine quinoa and water.

Step 2: Bring to boiling; reduce heat.

Step 3: Simmer, covered, about 15 minutes or until liquid is absorbed.

Step 4: Transfer quinoa to a medium bowl.

Step 5: Add tomato, spinach, avocado and onion; stir to combine.

Step 6: In a small bowl, whisk together lemon juice, Betsy’s Best Gourmet Cashew Butter and oil. Add to quinoa mixture; toss to coat.

Step 7: Place spinach leaves on 4 salad plates.

Step 8: Spoon quinoa mixture over spinach greens. Sprinkle with some of the feta.

Step 9: Enjoy your quinoa avocado salad!

Makes 4 main-dish servings.

A great spinach salad is the perfect summer meal. We love to dress our salads for success and find creative ways to work our gourmet sunflower seed butter into a dazzling dressing.

Salad Dressing Ingredients:

1/4 Cup Betsy’s Best Cinnamon Sunflower Seed Butter

1 clove garlic

1/4 c water

3 T maple syrup

1/4 tsp cinnamon

pinch sea salt & pepper to taste

1 tsp chia seeds, add after blending

Step By Step Spinach Salad Recipe Directions:

Step 1Arrange spinach leaves in 2 bowls and top with celery, apples, and walnuts.

Step 2: Prep dressing ingredients and place in blender except for chia seeds.

Step 3: Blend until smooth. Stir in chia seeds and pour over salads.

Yield: 2 salads.

Recipe Suggestion:s Feel free to swap out a different lettuce or toss with other fruits or vegetables.

Once the dressing is placed in the refrigerator it will thicken and we love to use it as a dip for veggies!

Peanut Butter Teriyaki Marinade Recipe

Are you ready to set your summer up for a healthy sizzle?  Light your grill and prepare your meat using our delicious and savory teriyaki marinade recipe.   Not only is the marinade loaded with healthy ingredients, as we learned in my healthy grilling blog post, the marinade will protect the meat from toxins created by the charcoal.

1/3 C mirin (Japanese sweet rice wine)

1/4 C soy sauce

2 T Betsy’s Best Gourmet Almond Butter

2 1/4 tsp rice vinegar

1/2 tsp sesame oil

3 T white sugar

1 cloves garlic, minced

1/4 T minced fresh ginger

1 dash red pepper flakes

1/2 tsp chia seeds

black pepper to taste

Bring mirin to a boil in a saucepan over high heat.  Reduce to a simmer for 10 min.  Add additional ingredients and cook an additional 5 min.  Store in refrigerator and use as a marinade or dressing.

The teriyaki marinade recipe will add great flavor to your protein and used as a dressing on your greens will the the whole meal together.  Now that is cooking with a sizzle!

Grilled Chicken Chimichurri Salad

A savory grilled chicken chimichurrisalad with an amazing sauce, Audrey from Mama Knows Gluten Free knows her sauces!  The amazing combo of the cilantro and cashew butter with cardamom makes the best marinade and salad dressing!  The dressing is so good you can simply eat it with a spoon!  This is one recipe you will certainly make again and again!

  • 4 tsp white vinegar
  • 1 tsp balsamic vinegar
  • 1⁄2 tsp turmeric
  • 1⁄2 C honey
  • 1⁄2 C Betsy’s Best Gourmet Cashew Butter with Cardamom
  • 1 C fresh cilantro
  • 2 garlic cloves
  • 2 green onions
  • 1 tsp ground cumin
  • 1⁄4 C olive oil
  • 2 chicken breasts

Your favorite salad fixings (pictured: romaine lettuce, avocados, cilantro, cucumbers, chopped cashews, chopped super blend mix, grape tomatoes, hard boiled eggs and a squeeze of fresh lime.)

To prepare the sauce:

In a food processor puree cilantro, garlic, green onions, and cumin.  In a microwave safe bowl stir together cashew butter, vinegars, turmeric, honey and microwave for 1 minute.  Add the cilantro mixture to the cashew butter mixture and stir until fully combined.  Pour olive oil into the combined mixture and stir to finish the sauce.  Refrigerate until ready to use.

The sauce will make 1 1/2 cups. 1/2 a cup is used for the chicken marinade.

To prepare the chicken:

Add two chicken breasts to a large plastic storage bag and pour 1/2 cup of the chimichurri sauce over the chicken.  Seal the bag and allow the chicken to marinate for at least one hour (the longer the better).  Add olive oil to your grill pan. Grill the chicken breasts on both sides until completely cooked.  Allow chicken to cool before slicing it for the salad.

To prepare the salad:

Chop your favorite salad fixings.  Place grilled chicken on top of salad.  Drizzle, or pour the chimichurri sauce all over the salad.  Enjoy!
