Asparagus roll-ups may not sound exciting, but when Betsy makes them, they are! Pigs in a blanket just got a healthy makeover. Move over hot dog, asparagus is rolling into this delicious appetizer. Rolled with ham or turkey and sealed with the deliciousness of the Betsy’s Best spread will make this appetizer one not to miss.

Ingredients:

1/2 C Betsy’s Best Cinnamon Sunflower Seed Butter

1 bunch Asparagus, boiled for 3 min

1/2 lb. low-sodium nitrate-free ham (or turkey)

1/2 cup nutritional yeast

1/4 cup hemp seeds

1/4 tsp sea salt

2-3 Tbsp almond milk (or more to thin)

1 bunch chives

 

Step By Step Asparagus Roll-ups Recipe Directions:

Step 1In a blender or food processor, add Betsy’s Best Sunflower Seed Butter, nutritional yeast, hemp seeds and sea salt.

Step 2: Process until it forms nut butter consistency.

Step 3: Gradually add almond milk to thin until reaching a cream cheese consistency.

Step 4: To make the asparagus roll, cut slice of ham/turkey in half.

Step 5: Place dab of Betsy’s mix on each end of the ham/turkey.

Step 6: Set a few asparagus on one end of the ham/turkey and roll towards the other end of the ham/turkey.

Step 7: Tie strand of chive around roll to secure.

Step 8: Enjoy your asparagus roll-ups!!
