Double the flavor, double the awesomeness of almond! These gluten free almond butter and almond flour chocolate chunk cookies are twice as delicious without the gluten guilt! Super moist and chewy, it will be hard to stop at just one!
- 1/4 c butter, softened
- 1/4 c Betsy’s Best Gourmet Almond Butter with Cinnamon
- 1/4 c packed brown sugar
- 1/4 c sugar
- 1 tsp vanilla extract, gluten free
- 1 egg + 1 egg white
- 2 1/2 c Blue Diamond Almond Flour
- 1/2 tsp baking soda
- 1/4 tsp sea salt
- 1 c chocolate chips or pieces, gluten free
Preheat oven to 350 degrees. Line two baking sheets with parchment paper. Beat together the butter, Betsy’s Best, brown sugar, white sugar, vanilla in a bowl. Add eggs and beat. Stir in almond flour, baking soda and salt. Mix well. Stir in chocolate chips. Drop tablespoons of dough 2 inches apart onto baking sheets. Bake 12-15 in or until lightly browned on top and firm to the touch.
Yield: 30 cookies
