Happy Gluten-Free Birthday to you!!!! Make your cake and eat it too…these portable homemade birthday cakes in a jar is a fun way to celebrate a birthday! Alternate layers with your favorite cake and pudding, but here at Betsy’s Best we like to keep it healthy with a dairy free pudding made with nutritious avocados and cake with pumpkin!

Recipe Ingredients:


1/2 Cup Betsy’s Best Cinnamon Peanut Butter

1 box all natural gluten-free chocolate cake mix

1 can pumpkin puree

Cake Filling:

1 ripe avocado, peeled and quartered

¼ cup cacao powder

¼ cup raw honey (or agave nectar)

¼ cup almond milk (or other milk substitute)

1 tsp vanilla extract

Fresh mint leaves or berries for garnish (optional)

Blend all ingredients in blender or food processor until smooth.

Step By Step Homemade Birthday Cake In A Jar Recipe Directions:

Birthday Cupcake Directions

Step 1: Preheat oven according to box directions.

Step 2: Combine all ingredients together in a bowl to form batter.

Step 3: Spray cupcake tin with non-stick spray and spoon batter into each cupcake mold until ¾ full.

Step 4: Bake according to box directions.

Step 5: Make filling recipe while cupcakes bake.

Step 6: Cool finished cupcakes on wire rack. 

To make the jar cupcakes:

Step 1: When cake cools take your glass jar and place one cupcake on the bottom of each jar.

Step 2: Layer on top of the filling with another layer of cupcake.

Step 3: Finish with the filling layer.

Step 4: Garnish with a mint leaf or berries.
