Make a dip that your fruits and vegetables will want to jump into. This is not your normal fruit dip, but a creamy peanut butter and spice blend of fall flavors.
- 1 cup pumpkin puree
- ½ cup almond milk
- 1/3 cup Betsy’s Best Gourmet Peanut, Almond or Seed Butter
- ¼ cup maple syrup
- 1 tsp vanilla extract
- ½ tsp cinnamon
- ¼ tsp nutmeg
- 1 Tbsp chia seeds
- Fruit, baked goods or crackers for serving
Combine all ingredients except chia seeds in small saucepan and cook over medium heat. Stir frequently and whisk until smooth. Once dip comes to boil, lower heat and cook 5-10 minutes, stirring occasionally to avoid scorching. Stir in chia seeds. Serve hot or chilled with fall fruits, baked goods or crackers.
Creamy peanut butter pumpkin dip is also great on wheat toast, English muffins, or crackers instead of jelly!
