Are you looking for gluten-free bread, but find the grocery store options just not filling enough or tasteless? This delicious Almond Butter Bread recipe is not only gluten free, but thanks to all of the protein and fiber it’s also filling. Add cinnamon and raisins for a different twist!
- 3 egg whites
- 1 whole egg
- 3 Tbsp honey
- 3 Tbsp coconut oil, melted
- 3 Tbsp Betsy’s Best Gourmet Almond Butter
- 1/2 tsp sea salt
- 1½ cup almond flour
- 3/4 cup arrowroot powder
- 2 Tbsp chia seeds
- 1/2 tsp baking soda
- 1 T cinnamon + 1/4 c raisins (for cinnamon raisin bread)
Preheat oven to 350°F. Grease bread loaf pan and set aside. In blender or food processor, add eggs and blend on low until whipped, about 3 min. Add honey, coconut oil, Betsy’s Best, salt, and cinnamon (if making cinnamon bread). Blend for 1 min until incorporated. In a large bowl, add dry ingredients and stir to combine. Add liquid ingredients to dry ingredients and stir until incorporated. Add raisins if making cinnamon bread and stir to combine. Pour batter into loaf pan and bake for 35-40 min.
