 A gluten-free recipe for pumpkin-seed-clusters

  • ½ cup Betsy’s Best Gourmet Sunflower Seed Butter (or substitute with Peanut Butter or Almond Butter)
  • ½ cup honey
  • 1 Tbsp cacao powder
  • ¼ tsp sea salt
  • 1/8 tsp cayenne pepper
  • 1 cup pumpkin seeds (or seeds or nuts of choice)
  • 2 Tbsp chia seeds
  • 1 cup crispy rice cereal
  • 1 cup gluten-free oats
  • ½ cup dried fruit/berries of choice (optional)

In a saucepan over medium-high heat, combine Betsy’s Best, honey, cacao, salt and pepper. Bring to simmer and cook 2 minutes. Remove pan from heat. Add pumpkin seeds, chia seeds, cereal, oats and dried fruit. Stir to combine. Place small drops on parchment paper and let cool before serving.
