Try a lettuce wrap with Boston bib lettuce, a flat-out wrap with a collard green leaf, a mock bun with a Portobello mushroom, hollow out a cucumber or zucchini to make an un-wich boat, use cucumber discs for a mini appetizer dish, or stuff a tomato or pepper with your favorite spread. There are so many possibilities, and being creative is all part of the fun!
