Betsy has created another healthy appetizer recipe, a smoked salmon wrap. The best appetizers are the ones that are not only easy to make but taste great!  This gluten-free coconut Nori wrap makes it easy and the cardamom cashew butter makes it pop!  What a great combo and one your friends and family will love!

Wrap Ingredients:

3 T Betsy’s Best Cardamom Cashew Butter

2 Coconut Nori Wraps from Wrawp

6 oz smoked salmon

3 T cream cheese

T2 T dill, chopped

2 T chives, chopped

Step By Step Smoked Salmon Wrap Recipe Directions:

Step 1: In a bowl mix together the Betsy’s Best Cashew Butter with Cardamom and the cream cheese. 

Step 2: Stir until combined and then add the dill and chives. 

Step 3: Spread 1/2 on one wrap and the rest on the other. 

Step 4: Add 3 oz of the smoked salmon on the end of the coconut wrap and do the same for the other. 

Step 5: Starting at the end with the smoked salmon, roll the coconut like a sushi roll and allow the cream cheese to seal the wrap at the end. 

Step 6:Slice with a sharp knife into sushi sized rolls and serve.  You can garnish with additional chives and dill.

Step 7: Enjoy your smoked salmon wrap!

You’ve found our Kick’in Cauliflower Roast Recipe, so now it is time to make this amazing side dish! It’s a perfect pairing next to any grilled food. Cauliflower is making a comeback and while this cruciferous vegetable usually consumed raw or steamed, roasting makes for a unique dish. Consume as a side or turn into a snack, you will find this recipe keeps you coming back. it!

Recipe Ingredients:

1/4 Cup Betsy’s Best Cinnamon Peanut Butter

1 head cauliflower

2 Tbsp nutritional yeas

1 Tbsp hot water to thin (if needed)

½ tsp sea salt

 

Step By Step Recipe Directions:

Step 1: Preheat oven to 350°F.

Step 2: Cut cauliflower into bite-sized pieces

Step 3:Whisk together Betsy’s Best, nutritional yeast, water and salt.

Step 4: Toss with chopped cauliflower.

Step 5: Spread cauliflower on baking sheet.

Step 6: Roast 35-45 minutes.

Step 7: Enjoy!

Pumpkin Curry Soup with Seed Butter

Pumpkin Curry Soup with Seed Butter

What’s not to like about Betsy’s Best pumpkin curry soup? A simmering soup with scrumptious flavor, pumpkin and sunflower seed butter in an Indian curry makes a delicious combination. This filling pumpkin peanut butter curry soup recipe is loaded with beta carotene and fiber and will fill you up with flavor. We promise! You’ll taste the difference!

Soup Ingredients:

3 T Betsy’s Best Cinnamon Sunflower Seed Butter

2 Tbsp olive oil (or coconut oil)

1 small yellow onion, chopped (about ¾ cup)

2 garlic cloves, chopped

1 apple, cored and cubed

3 Tbsp Thai red curry paste

2 cups vegetable stock

1 cup water

1 (15 oz.) can pumpkin puree

Sea salt, to taste

Fresh black pepper, to taste

Fresh parsley for garnish

Step By Step Pumpkin Curry Soup Recipe Directions:

Step 1: Heat oil in large saucepan over medium heat. Add onion and cook until tender but not brown (about 5 minutes).

Step 2: Add garlic, apple and curry paste. Cook until the curry paste is very fragrant, stirring constantly, about 3 minutes.

Step 3: Increase to high heat. Add stock and water. Once the liquid boils, reduce heat to medium-low, and partially cover the pan.

Step 4: Let soup cook until apple is very tender, about 10 minutes.

Step 5: Remove pan from heat and let cool slightly. Stir in pumpkin and Betsy’s Best Gourmet Seed Butter.

Step 6: Working in batches, transfer the soup into a blender and puree until smooth, about 1 minutes.

Step 7: Season with salt and pepper.

Step 8: Garnish with parsley. 

Step 9: Enjoy!

Yields 4 servings.

Pumpkin Dip Ingredients:

1/3 Cup Betsy’s Best Cinnamon Almond Butter

1 cup pumpkin puree

½ cup almond milk

¼ cup maple syrup

1 tsp vanilla extract

½ tsp cinnamon

¼ tsp nutmeg

1 Tbsp chia seeds

Fruit, baked goods or crackers for serving

Step By Step Homemade Pumpkin Dip Recipe Directions:

Step 1: Combine all ingredients except chia seeds in small saucepan and cook over medium heat.

Step 2: Stir frequently and whisk until smooth.

Step 3: Once dip comes to boil, lower heat and cook 5-10 minutes, stirring occasionally to avoid scorching. Stir in chia seeds.

Step 4: Serve hot or chilled with fall fruits, baked goods or crackers.

1/2 C water

3 T fresh lemon juice

2 T extra-virgin olive oil

3/4 tsp salt

1/4 tsp black pepper

Preparation

Step By Step Cashew Butter Hummus Recipe Directions:

Step 1: Place beans and garlic in a food processor; pulse 5 times or until chopped.

Step 2: Add 1/2 cup water and remaining ingredients; pulse until smooth, scraping down sides as needed.
