Ingredients:

1 T Betsy’s Best Cinnamon Almond Butter

1 cup almond milk (or coconut or other alternative milk)

½ apple

½ banana, frozen

1/3 small zucchini

1 tsp coconut palm sugar (or 3 dates or 3-4 drops liquid Stevia)

½ tsp vanilla

½ tsp cinnamon

1 Tbsp chia seeds

Pinch sea salt

Step By Step Apple Pie Smoothie Recipe Directions:

Step 1: Place all ingredients in blender or food processor.

Step 2: Blend until smooth and creamy.

Step 3: Pour into your favorite smoothie glass.

Sweet Greens Smoothie

A refreshing sweet green smoothie that is mild and sweet (but low in sugar), these green vegetables compliment each other in a delicious blend. Don’t let the green color deceive you—green is not mean, and this will become one of your favorite smoothies! 

Ingredients:

2 T Betsy’s Best Cardamom Cashew Butter

1 c water

3 Romaine lettuce leaves

1 stalk celery

1 T chia seeds

2” chunk of cucumber

1 small handful or 1 oz of parsley leaves

1/2 lemon peeled and seeded

1/2 apple, cored

2 T coconut cream or coconut milk

Small knob Ginger (about 1/4 in)

Pinch sea salt

Step By Step Green Smoothie Recipe Directions:

Step 1Place all ingredients in a blender.

Step 2: Blend until smooth

Step 3: Pour your green smoothie into your favorite glass and Enjoy!

Crockpot Steel-Cut Oats with Caramel Apples

Crockpot steel cut oats are a staple in Betsy’s healthy breakfast choices. The steel cut oats are super healthy and the crockpot makes this recipe super easy. After all, the only thing better than the smell of slow-cooked caramel apples is how they taste! Especially when steel-cut oats and Betsy’s Best Gourmet Almond butter are key ingredients.

Ingredients:

2 T Betsy’s Best Cinnamon Almond Butter

2 apples, peeled, cored and cut into ½-inch cubes (2½-3 cups chopped)

1 cup uncooked steel-cut oats

1½ cups unsweetened almond milk (or any milk/non-milk substitute)

1½ cups water

2 Tbsp brown sugar (or maple syrup/another non-calorie sweetener)

½ Tbsp cinnamon

1 Tbsp ground flax seed (or chia seed)

1 tsp vanilla extract

¼ tsp sea salt

1½ Tbsp coconut oil (optional)

Step By Step Crockpot Steel Cut Oats Recipe Directions:

Step 1Coat the inside of a 3½-quart crockpot with cooking spray (recipe can be doubled for 6-quart or larger crockpot: increase cooking time by 1 hour).

Step 2: Add all ingredients except toppings to crockpot.

Step 3: Stir, cover and cook on low for approximately 7 hours.

Step 4: Spoon oatmeal into bowls.

Step 5: Sprinkle with additional toppings and serve.

 

Step 5: Enjoy the crockpot steel cut oats!

Refrigerate leftovers. Freezes well.

To reheat:

Combine 1 cup oatmeal with 1/3 cup fat-free milk (or any milk) in microwave-safe bowl. Microwave on high 1 minute. Stir. Cook another minute, or until hot.

Optional toppings:

chopped nuts, raisins, maple syrup, milk, butter

Apple Stuffing With Almond Butter Glazed Sweet Potato

Move over Thanksgiving turkey, this sweet potato almond butter glazed apple stuffing is going to steal the show! The recipe is not only unique, but a healthier version of traditional stuffy stuffing. It is loaded with flavor and nutrition thanks to apples, sweet potato, and all-natural cinnamon almond butter. #TasteTheDifference!

Ingredients:

2 Tbs Betsy’s Best Cinnamon Almond Butter

2 large sweet potatoes

2 Tbsp grapeseed oil (or coconut/canola)

1 ½ cups chopped raw onions

½ cup diced celery

½ tsp sea salt

¼ tsp black pepper

2 cups chopped apples

½ cup water

¼ tsp ground cinnamon

¼ tsp ground nutmeg

2 cups bread crumbs (use 4 slices whole wheat or gluten-free bread, toasted and crumbled)

½ cup low-sodium chicken broth (or water)

Step By Step Apple Stuffing Recipe Directions:

Step 1Wash potatoes and leave skin on. Dice in large chunks.

Step 2: Transfer potatoes to pot with enough water to cover potatoes. Bring to a boil.

Step 3: Reduce heat and simmer until tender (20 minutes). Drain.

Step 4: Mash potatoes in a large bowl.

Step 5: Heat oil in large pan on medium-high heat. Add onions, celery, salt and pepper.

Step 6: Cook, stirring often, for about 5 minutes. Add apples, Betsy’s Best, water and remaining spices.

Step 7: Continue cooking and stirring for 3-4 minutes.

Step 8: Stir mixture, then add the chicken broth and bread crumbs into bowl with sweet potatoes.

Step 9: Use stuffing as is, or place in lightly oiled 9x9 baking dish and bake at 350°F for 20 minutes, or until golden brown.

Step 10: Have a happy and healthy Thanksgiving!

How To Make Chia Seed Pudding

If you want to learn how to make chia seed budding, don’t worry.  Betsy Opyt, a registered Dietitian loves to cook and she has created a simple and yummy apple pie chia pudding recipe just for you. If you love the health benefits of chia seeds, you’ll love the nutrition in homemade chia pudding. Even better, you are going to love the rich and satisfying taste. Superfood never tasted so good.

Apple Pie Chia Pudding Ingredients

  • 12 oz. almond milk (or coconut milk), divided
  • 1 Tbsp Betsy’s Best Gourmet Almond Butter
  • 4 Tbsp chia seeds
  • 1/4 cup apple chips broken into small pieces (or sliced apple)
  • 1 tsp cinnamon
  • Pinch of sea salt
  • 4-5 drops liquid Stevia (or honey)

Step By Step Directions For Making Betsy’s Chia Seed Pudding

Step 1: Add Betsy’s Best Gourmet Almond Butter and ¼ cup of the milk to a jar with a lid.

Step 2: Stir with a spoon until Betsy’s Best dissolves.

Step 3: Add remaining milk and all other ingredients to jar and close lid tightly.

Step 4: Shake for a few seconds and place in refrigerator for 5 minutes.

Step 5: Remove and shake again.

Step 6: Let sit in refrigerator another 5 minutes.

Step 7: Remove and shake one more time or stir with spoon until chia jells evenly.
