Healthy, energy boosting lemon squares anyone? Toasted coconut and lemon are two great foods for summer snacks.  Whether you are a kid or an adult you will love these delicious coconut cashew butter lemon energy bites.  Make a bunch and pack them on your long bike rides or hikes.  If you are just relaxing or heating healthy at work they are a great snack and it’s vegan-friendly, too!

Ingredients:

1/2 Cup Betsy’s Best Cardamom Cashew Butter

2 T shredded coconut

Zest from 1 lemons

1/2 fresh lemon, juiced

1 T Agave

Shredded coconut to garnish

Step By Step Lemon Square Recipe Directions:

Step 1: Add all the ingredients to a bowl and stir until combined. 

Step 2: Roll into 6 balls and roll the balls in shredded coconut.

Step 3: Store in the fridge, covered, for up to 1 week.  

Step 4: Enjoy!

Yield 6 lemon squares.

Peanut Butter Chocolate Chip Cookie Recipe

Recipe Ingredients:

1/4 Cup Betsy’s Best Cinnamon Peanut Butter

½ cup butter, I prefer salted, at room temp

1/4 cup packed light brown sugar

1/2 cup white granulated sugar

1 large eg

1 teaspoon vanilla extract

½ teaspoon baking soda

1 1/2 all-purpose flour

2 T coconut Oil

1 ½ cups semi-sweet chocolate chips

Peanut Butter Chocolate Chip Cookie Recipe Directions:

Step 1With an electric mixer or by hand, mix the butter, Betsy’s Best Cinnamon Peanut Butter, brown sugar and granulated sugar together.

* If you don’t use salted butter Betsy recommends adding 1 tsp of Himalayan pink salt.

Step 2: Add oil, vanilla, salt (if needed) and egg and stir to combine.

Step 3: In a separate bowl add flour and baking soda to combine and add to butter mixture and stir until incorporated with an electric mixer or by hand.

Step 4: Stir in the chocolate chips.

Step 5: Bake at 350 degrees for 10 minutes or until golden brown.

Step 6: Let cool and Enjoy!!!

These peanut butter chocolate chip cookies are going to be really, really good, but please let them cool down before you gobble them up. BTW, this is the perfect recipe for National Chocolate Chip Cookie Day. Please let us know what you think in the comments below.

Mom Minded for Mother’s Day 2018

What goes on in the minds of mothers would be an interesting study.  As a mom myself, I know my head is swimming with a million things to do and somehow finding ways to balance it all–family, work, house, cooking, shopping, laundry, walking the dog, carpooling, coffee, coffee, coffee…oh yea, sleep.

As I know, moms are always on the go and often put themselves last.  As children, we don’t see everything that goes into the daily routine of being a mom.  We take it for granted that mom somehow is always there for us.  That is unconditional love, the forever hug, a sense that somehow mom always has our back.

Even as adults we still need our moms and hopefully develope an appreciation for all the hard work that went into those child-rearing years.

This Mother’s Day make mom feel special and create a memory that will last beyond a day.  Sure a gift or flowers is one way to show appreciation, but finding a way to touch her heart and show her just how much we appreciate her love is even better.

Here are some unique ways to show her you care:

Wellness Walk– Fortunately Mother’s Day is in the spring and the weather should be delightful!  Find a park, wellness trail, garden or a river walk and share the beauty of the great outdoors with her.

Legacy Box– Take all those photos and videos of your cherished time together as you were growing up and help her preserve those memories.  Don’t stop with the past but continue to add to the legacy box with new cherished memories.

Plant an Herb Garden– A bouquet of flowers is short lived but a pot of herbs is a gift that keeps on giving.  If your mom has a green thumb and loves to cook, a potted plant of fresh herbs is one way to show you care.

Movie Memory– If you live afar and cannot be with your mom for Mother’s Day, create a movie montage for her to cherish now.  Remember watching those old movies of your mom and you when you were growing up?  She is likely to cherish watching a movie of you now.  Tell her a funny memory from when you were little, or remind her of your most treasured moment with her.  Sometimes all a mom wants to hear is how much you care for her.

The Gift of Good Health– Investing in your mother’s health is the perfect payback for all of those years she made you eat your veggies!!!  Give her a gift certificate to Whole Foods, a meal delivery service for a week or a jar of Gourmet Nut and Seed Butter like Betsy’s Best!!!  I had to add that one idea in there!

So spread the love this Mother’s Day with a gift from the heart.  I know I am “nuts” for my mom and thankful for all that she has taught me.  I am sincerely appreciative of all her love and continued support as I learn the ropes of being a mom myself.

Hummingbird Cupcakes with Almond Butter Streusel Topping

These almond butter hummingbird cupcakes are a real treat. Sweet as can be, but healthy at the same time. All natural sweetness comes from fruit and honey, while powerful protein from almonds balances out this morning muffin. This muffin will have you humming all morning! We know you’ll #TasteTheDifference!

Ingredients:

1 T Betsy’s Best Cinnamon Almond Butter

1 1/2 C blanched almond flour

1/2 tsp salt

1/2 tsp baking soda

1/2 tsp vanilla

1 tsp cinnamon

3 eggs

1/4 C honey

2 T coconut oil, melted (any nut or vegetable oil will work)

1 C smashed ripe bananas, about two bananas

1 C crushed pineapple, drained

1 T chia seeds

Step By Step Hummingbird Cupcakes Recipe Directions:

Step 1: Preheat oven to 325 F.

Step 2: In a large bowl, combine almond flour, salt, baking soda, chia seeds, and cinnamon.

Step 3: In a separate bowl, mix together eggs, golden syrup, vanilla, Betsy’s Best, and oil.

Step 4: Mix bananas and pineapple into the wet ingredients.

Step 5: Stir wet ingredients into the dry ingredients. Set aside.

 Step 6: Enjoy the hummingbird cupcakes!

2 T Betsy’ Best Gourmet Almond Butter

1/2 c brown sugar

1/2 c gluten free flour blend

1/2 c oats

1/2 tsp vanilla

pinch sea salt

2 T coconut oil

Cupcake Streusel Topping Directions

Step 1: Add all ingredients to bowl and stir with a fork until crumbled.

Step 2: Divide batter evenly between 14 cupcake liners (liners should be filled almost to the top) and add streusel topping.

Step 3: Bake for 20 minutes or until a toothpick comes out dry.

Yield : 12 cupcakes

This almond butter hummingbird cupcake with streusel topping recipe can also be baked as a small cake or bread loaf. It can also be made into mini muffins for small bites of a delicious treat!

How To Hide Vegetables in Food

Are you wondering how to hide vegetables in food? You know greens are healthy for you. Your mother told you to eat them when you were little to make you strong; but are you getting enough in your diet?  Becoming a green eating machine is not as difficult as you might think even if you don’t like veggies.  You just have to know how to add them into your diet.  Here are some ways to sneak in those greens. Your health depends on it!

How To Hide Vegetables in Food?  Betsy’s Best Ideas

Smoothies: What better way to get your greens than to drink them in a smoothie!  For example, mask the taste with fruit and you won’t even know you are eating spinach.

Omelets: Turn your breakfast into a veggie fest by adding spinach, arugula, beet greens, parsley or cilantro and salsa into your eggs for a delicious twist!

Grilled: Roasting veggies is one of the easiest ways to enjoy a flavorful dish.  Grilled endive and radicchio are not commonly grilled foods but are flavorful companions to peppers, onions, and mushrooms.  Even throwing a portobello mushroom on the grill instead of steak will offer a healthier dish with a meaty flavor.

Baked: Baking or roasting veggies is as easy as 1-2-3.  Throw some kale on a baking sheet, spray with olive oil, massage 3 tablespoons of your favorite Betsy’s Best Gourmet Nut or Seed Butter, sprinkle with sea salt and bake at 350 degrees for 10-15 minutes.  You can also roast Brussels sprouts for a dish that is delish!

Shredded: When shredded finely, even tougher greens become easy to handle.  You can shred these greens for a healthy garnish on mashed potatoes or mix them into your favorite salad.

Wrap them up: Instead of using a tortilla, crunchy greens that contain a good amount of water, such as Swiss chard, bok choy, escarole, or romaine, make fantastic wraps for a variety of fillings, ranging from roasted eggplant, tomatoes, onion, and garlic to teriyaki chicken made with  Betsy’s Best Gourmet Nut or Seed Butter.
