Almond Butter Chai Banana Chia Smoothie

Combining the great flavor of banana with a healthy spice and of course Betsy’s Best Gourmet Almond Butter, this chai banana chia smoothie recipe will be one of your favorites.

Smoothie Ingredients:

1 T Betsy’s Best Cinnamon Almond Butter

1 cup almond milk or milk alternative

1 medium banana, frozen

¼ cup Yellow Squash

2 medjool dates, pitted

1 Tbsp Hemp Seeds

1 Tbsp chia seeds

½ tsp chai spice (or tea masala, *see recipe below)

1 tsp creamed coconut (or coconut butter)

1 knob fresh ginger, skin removed (approx. 1 tsp)

Blend all ingredients in blender until smooth

Chai spice recipe:

2 tsp ground cinnamon

2 tsp ground cloves

2 tsp ground cardamom

1 tsp ground coriander

1 tsp ground ginger

½ tsp ground white pepper

pinch Himalayan rock salt

Step 1: Place all smoothie ingredients into your blender.

Almond Butter, Fruit & Yogurt Parfait

Parfait Ingredients:

3 T Betsy’s Best Cinnamon Almond Butter

8 oz vanilla Greek yogurt or unsweetened

2 T strawberry jam

1/2 c mixed berries

3 T granola

Step By Step Fruit and Yogurt Parfait Recipe Directions:

Step 1: Start with 4 oz of yogurt and top with 1 T of jam and add 1/4 c of berries. 

Step 2: Add 1 T of Betsy’s Best and then add the rest of the yogurt, jam and berries and the rest of the Betsy’s Best. 

Step 3: Sprinkle with granola.

Step 4: Enjoy your fruit & yogurt parfait

Homemade Pumpkin Granola

Take your breakfast up a notch with this blend of pumpkin spice with golden oats. Baked to be crunchy, this pumpkin granola mix is great on yogurt, covered with milk, or mixed with almonds and dried fruit.

Granola Ingredients:

3 T Betsy’s Best Cinnamon Almond Butter

3 cups gluten-free oats

¼ cup raw sunflower seeds

½ cup raw cashews, roughly chopped

½ cup pureed pumpkin, unsweetened

3 Tbsp chia seeds

¼ tsp sea salt

3 Tbsp honey

1 ½ Tbsp vanilla extract

¼ cup maple syrup

3 Tbsp brown sugar

½ cup raisins (or other dried fruit)

Step By Step Homemade Pumpkin Granola Recipe Directions:

Step 1: Preheat oven to 350°F. In a large bowl, combine all ingredients and stir until moistened.

Step 2: Line baking sheet with parchment paper and evenly spread mixture across baking sheet.

Step 3: Bake 15 minutes, stirring halfway through to cook evenly.

Step 4: For crunchier granola, cook a few minutes longer, or until desired consistency is reached.

Step 5: Enjoy your homemade pumpkin granola!

Gluten-Free Peanut Butter & Jelly Muffins 

Betsy’s Peanut Butter and Jelly Muffins are the real deal. Taking the classic PB&J sandwich to new heights is one of Betsy’s favorite cooking activities! Her gluten-free muffin is moist and delicious with every bite! Use your favorite Betsy’s Best butter for the flavor you desire.Consume as a side or turn into a snack, you will find this recipe keeps you coming back. it!

Muffin Ingredients:

3/4 Cup Betsy’s Best Cinnamon Peanut Butter

3 very ripe bananas

3/4 C gluten-free flour

1/4 C pure maple syrup

1/2 tsp sea salt

1/2 tsp baking soda

1 T raw apple cider vinegar

1 C fresh raspberries

1/2 C jelly 

Step By Step Peanut Butter and Jelly Muffins Recipe Directions:

Step 1Preheat oven to 350 degrees and line muffin tin with 12 baking cups.

Step 2: In a large mixing bowl use a fork to mash the ripe bananas until they are in a pureed state.

Step 3: Add the Betsy’s Best, flour, made syrup, salt, and baking soda and mix well until a sticky batter is created.

Step 4: Add the vinegar list. Fold in the fresh raspberries and fill only 1/4 of each muffin cup.

Step 5: Add 1 tsp on Jelly on top of the batter in the muffin cup and then fill the rest of the muffin cup until 1/2 full with the rest of the batter.

Step 6: Bake until the centers are firm and the tops begin to crack, about 20 min. Store in a sealed container in the fridge for up to a week.

Step 7: Enjoy!

Use your favorite jelly or change the fresh fruit for blueberries, blackberries, cranberries or extra banana! Betsy knows hoe good these peanut butter and jelly muffins are.  With this recipe you’ll never have to buy store bought, chemically infused muffins again.  #PBJGourmet
