How to Eat a Healthy Lunch at Work

Ingredients:

1 C cold coffee

1/2 banana, frozen

1/2 C ice

Step By Step Recipe Directions:

 

Step 1: Brew unflavored coffee

Step 2Place all ingredients in blender and blend till smooth.

Step 3: Poor into favorite glass and feel free to add affitional ice

1 whole avocado

1 Egg

1 Slices of Whole Grain Bread

Himalayan Pink Salt

Step By Step Avocado Toast Recipe Directions:

Step 1: Fry the egg in a skillet and break the yolk before turning it over.

Step 2: Pit and thinly slice the avocado. 

Step 3: Toast 1 slice of your favorite whole grain bread.

Step 4: Spread Betsy’s Best Cardamom Cashew Butter onto the toast and place the fried egg on top. 

Step 4: Place the avocado slices on the egg. 

Step 5: Add salt and pepper to your taste preferences.

Cardamom Cashew Chia Seed Pudding

Chia Pudding Ingredients:

2 T Betsy’s Best Cardamom Cashew Butter

1 C water

1/4 tsp vanilla

1 T honey

pinch of pink Himalayan salt

3 T chia seeds

 

 

Step By Step Cashew Chia Seed Pudding Recipe Directions:

Step 1: In a blender, add water, Betsy’s Best Gourmet Cashew Butter, vanilla, salt and honey.

Step 2: Blend until incorporated. In a glass jar with a lid, pour cashew milk into jar and add 2 T of chia seeds.

Step 3: Tighten lid and shake. Place in refrigerator and every 5 min give the jar another shake until chia seeds absorb the water.

Step 4: Once finished you can enjoy cold like a pudding or heat and eat like an oatmeal.

Step 5: Garnish with your favorite toppings.

White Bean Turkey Chili with Cardamom Cashew Butter

Chili Ingredients:

2 T Betsy’s Best Cardamom Cashew Butter

2 clove garlic, minced

1 lb lean ground turkey

1 (4oz) can green chile peppers, chopped

1/2 T ground cumin

1/2 T dried oregano

1/2 tsp ground cinnamon
ground cayenne pepper to taste

2 (15 oz cans) cannellini beans, drained and rinsed, separate 1/2 c

2 c chicken broth

1 c shredded Monterey Jack cheese

Step By Step White Bean Turkey Chili Recipe Directions

Step 1: In a large pot over medium heat, combine the onion, garlic and ground turkey and saute for 10 minutes, or until turkey is well browned. Add the chile peppers, cumin, oregano, cinnamon, cayenne pepper to taste and white pepper to taste and saute for 5 more minutes.

Step 2: Add 1 1/2 cans of the beans and the chicken broth to the pot. Take 1/2 c beans with the 2 T Betsy’s Best and puree them in a blender or food processor. Add this to the pot along with the cheese. Stir well and simmer for 10 minutes, allowing the cheese to melt.

Step 3: Enjoy your white nean turkey chili!!
