Chive and Apple Salad with Cashew Butter Dressing

This savory chive and apple salad will make eating healthy so easy! Featuring Betsy’s Best Gourmet Cashew Butter with Cardamom in the dressing this salad has amazing flavor and the ingredients you need to stay satisfied.  If you’ve never tried cardamom, you’ll be surprised at how well it pairs with apples.

Salad Ingredients:

2 T Betsy’s Best Cardamom Cashew Butter

2 1/2 Ounces Manchego Cheese, matchstick

3 Whole Green Apples, matchstick

10 cranberries

1 1/2 Tbsp Chives, chopped

3 Tbsp Olive Oil

1/8 Cup Shallots

1 Tbsp Lemon Juice

1/2 Tbsp Cider Vinegar

1 tsp Lemon Zest

1 Salt & pepper to taste

Step By Step Chive and Apple Salad Recipe Directions:

Step 1: Mix Manchego, apples and chives in a bowl.

Step 2: Add cranberries to the apple salad 

Step 3: Mix all other ingredients together until Betsy’s Best Gourmet Cashew Butter is dissolved or blend in a blender. 

Step 4: Pour over apple mixture and gently toss. 

Step 5: Serve right away. 

Step 6: Enjoy your apple salad!

Crab Cakes with Lemon Cardamom Cashew Butter Aioli

You don’t have to live in Maryland to eat the best crab cakes.  Make them at home and give them a twist with this delicious aioli sauce.  The hint of cardamom gives this dip a zip!

Crab Cake Ingredients:

1 egg white
8 oz crabmeat
1 tsp dijon mustard
1 tsp Worcestershire sauce
1/2 tsp Old Bay seasoning
1 T parsley, chopped
2 T panko crumbs
2 T vegenaise or mayo


Cardamom Ginger Aioli Ingredients:

1/2 C vegenaise or mayo
1 tsp dijon mustard
1 T lemon juice
2 T Betsy’s Best Gourmet Cashew Butter with Cardamom
1/2 tsp ginger, zested
Dash pepper


Combine all of the crab cake ingredients and form into 5 small patties.  Heat oil in a skillet and cook on each side until golden.  5-7 min.  Remove and place on a paper towel to cool.

Meanwhile in a bowl combine all of the aioli ingredients and stir to combine.  Use as a topping or a dipping sauce.

Smoothie Ingredients:

1/2 T Betsy’s Best Cardamom Cashew Butter

4-5 frozen coffee cubes (or ¼ cup cold coffee)

1 cup almond milk

½ banana, frozen

1 tsp cacao powder

1 Tbsp chia seeds

3-4 drops liquid Stevia (or 1 tsp honey)

Pinch sea salt

Step 1Make ahead: pour your favorite coffee into ice cube tray and freeze until solid.

Step 2: After cubes are completely frozen, add all ingredients to blender and blend until smooth.

Cardamom Cashew Butter Cookie

HereCreative cookies are all the rage and who doesn’t like a soft and chewy cookie that bursts with flavor. I bet you have never had a cashew butter cookie before, and if you love cashews this will become your favorite recipe!


1 C Betsy’s Best Gourmet Cashew Butter with Cardamom
1 C brown sugar
1/2 C flour
1 egg
1 tsp baking soda
1/2 tsp vanilla
1/4 tsp sea salt
1/2 C chopped cashews
1/2 C white or dark chocolate chips

Step By Step Recipe Directions:


Step 1:Preheat oven to 350 degrees.

Step 2: In a large mixing bowl, combine all ingredients and stir until blended.

Step 3: Place cookies on cookie sheet and bake 8-10 min or until golden brown on the edges.

Step 4: Enjoy!

 You can easily swap out the cashew butter for another nut or seed blend from Betsy’s Best. Swap the chopped cashews for walnuts or pecans for a different flavor. If you love the cardamom spice, add an additional 1/4 tsp to the recipe to spice it up even more!
