Chive and Apple Salad with Cashew Butter Dressing

This savory chive and apple salad will make eating healthy so easy! Featuring Betsy’s Best Gourmet Cashew Butter with Cardamom in the dressing this salad has amazing flavor and the ingredients you need to stay satisfied.  If you’ve never tried cardamom, you’ll be surprised at how well it pairs with apples.

Salad Ingredients:

2 T Betsy’s Best Cardamom Cashew Butter

2 1/2 Ounces Manchego Cheese, matchstick

3 Whole Green Apples, matchstick

10 cranberries

1 1/2 Tbsp Chives, chopped

3 Tbsp Olive Oil

1/8 Cup Shallots

1 Tbsp Lemon Juice

1/2 Tbsp Cider Vinegar

1 tsp Lemon Zest

1 Salt & pepper to taste

Step By Step Chive and Apple Salad Recipe Directions:

Step 1: Mix Manchego, apples and chives in a bowl.

Step 2: Add cranberries to the apple salad 

Step 3: Mix all other ingredients together until Betsy’s Best Gourmet Cashew Butter is dissolved or blend in a blender. 

Step 4: Pour over apple mixture and gently toss. 

Step 5: Serve right away. 

Step 6: Enjoy your apple salad!

Homemade Trail Mix | A Fall Harvest Treat

As the fall harvest comes to an end celebrate the holidays and stay healthy with this delicious homemade Trail Mix recipe.  Featuring the healthy fats of your favorite nuts, nut butters and fall flavors like pumpkin and cranberry it is sure to please.

Harvest Trail Mix Ingredients:

1 T Betsy’s Best Cinnamon Almond Butter

1/2 c pecans

1/2 c cashews

1/2 c peanuts

1/2 c dried cranberries

1/4 tsp pumpkin pie spice

1/2 c white chocolate chips

 

Step By Step Homemade Trail Mix Recipe Directions:

Step 1In a bowl combine all the nuts and cranberries.

Step 2: In a microwaveable safe bowl melt chocolate at 50% power for 1 min.

Step 3: Stir until chocolate is melted and there are no lumps.

Step 4: Add spice and Betsy’s Best and stir to combine.

Step 5: Pour chocolate over nuts and toss.

Step 6: Place on wax paper and spread out to allow to cool and harden.

Step 7: Place in airtight container or scoop into single-serve snack bags.

Step 8: Enjoy your homemade harvest trail mix

Asian Chicken Salad with Cashew

A delicious dish with great flavor, we love Asian inspired chicken with a kick of Betsy’s Best. You could marinate chicken tenders placed on skewers and grill, or turn this into a vegetarian recipe and throw vegetables and tofu in the mix. A versatile recipe for everybody!

Recipe Ingredients:

3 T Betsy’s Best Cinnamon Peanut Butter

¼ C soy sauce

¼ C fish sauce

1 1/2 T hot pepper sauce

3 cloves garlic, minced

1 T minced fresh ginger root

4 skinless, boneless chicken breast halves cut into thin strips

1 T sesame oil

3 T brown sugar

1 small sliced onion

¾ C water

1 cup chopped cashews

Step By Step Asian Chicken Salad Recipe Directions:

Step 1In a large bowl, mix together the soy sauce, fish sauce, hot pepper sauce, garlic, and ginger.

Step 2: Add the chicken, make sure it’s coated, and then marinate in the refrigerator for 2 hours.

Step 3: Heat the sesame oil in a large skillet over medium heat.

Step 4: Stir in the brown sugar until dissolved, then the onion, and cook about five minutes.

Step 5: Lift the chicken pieces from the marinade (saving the marinade mixture) and place into the skillet for about 10 minutes, or until evenly browned and the juice clear.

Step 6: Stir the reserved marinade and ¾ cup water into the skillet with the chicken and bring to a boil.

Step 7: Cook and stir for another 10 minutes.

Step 8: Blend in the Betsy’s Best and add chopped cashews.

Step 9: Enjoy your Asian Chicken Salad Lettuce Wraps!

Turn this into a stir-fry by adding vegetables and place over rice. Remove the red pepper sauce to reduce the heat.
