The sunny yellow flower that rings memories of sunny summer days, or the savory salted seed that you sucked on and spit out in the dugout may be what comes to mind first when the word sunflowers are mentioned. For me as a dietitian a seed is always considered a “super” food with “super powers” for proving the body with rich nutrients. Think of the power of all seeds and how they bring life to a plant and contain so many rich nutrients to allow growth and sustainability.

When I was developing my delicious nut butter creations naturally peanut butter was my first creation soon followed by the almond. Both containing seeds in the form of chia seeds to help not only boost nutrition, but offer that distinctive crunch to every bite. However I felt my creations were not complete and that there was something missing from my new line of products. There was a NEED for SEED and not just because of allergies to the alternative butters, but those tiny little seeds offer the “super” food effect I was looking for. The pairing of chia seeds with sunflower seeds is truly a unique combination and bring more to the table then just sunflower seeds alone.

The Health Benefits of Sunflower Seeds

The savvy sunflower seed has magic powers. A rich source of vitamin E, selenium, magnesium….. it is for sure a seed in its own category. Roasted, toasted, raw, or ground, it is delicious in every form and can be sprinkled over a salad, added to granola, finely chopped to resemble a protein alternative, or ground into a delicious “nut-like” butter just like we do at Betsy’s Best.

1 C almond milk

3 T pumpkin

1/4 apple

1 T chia seeds

pinch sea salt

1/4 tsp vanilla
