How To Make Easy Healthy Desserts That Are Nut-Rageous

Growing up, I would always misspell the words ‘desert’ and ‘dessert’. My teachers would tell me to think about the ‘s’ in the word—they would tell me that ‘dessert’ has two ‘s’ because they are super sweet and make us want to eat more; hence the double ‘s’. Deserts are typically very dry and sunny; not something we want more of; hence the single ‘s’. As silly as this is, it is something that has stuck with me into adulthood and has even made its way into the American diet. It is not a secret that most Americans have a sweet tooth and have no problem putting the extra ‘s’ in dessert.

As Americans, I believe we are all born with a natural attraction to desserts. It’s like we have a sweet tooth with a sensor, and once we come across a dessert, the sensor signals the body that it absolutely needs it. So, as many Americans do, we eat the dessert and move on with our lives. However, we often forget about the calories, sugar, and fat content of the sweets we are eating.

We all have this natural sweet tooth that needs to be satisfied every so often. However, there are many other ways to “splurge” into desserts without as many calories, sugar and fat.

Some Ideas For Easy Healthy Dessert Preparation:

Applesauce:

Applesauce—the unsweetened kind—should be a staple item for every baker as you can substitute it for sugar in many recipes. However, when doing so, you will need to reduce the amount of liquid in the recipe (approx. ¼ cup) to counteract the substitution. Using applesauce instead of sugar allows for a more natural sweetness and less calories. Additionally, applesauce can be used to substitute oil or butter in a recipe. There are two ways to do so: Replace half of the total butter or oil with applesauce or replace the whole amount. No matter what the substitution you choose, calories and fat content will be decreased.

Fruit:

Peanut Butter and Jelly Smoothie Bowl With Chia Seeds

This peanut butter and jelly smoothie bowl recipe was created by one of our favorite gourmet partners, World of Chia.  Their chia fruit jams are amazing and they pair great with Betsy’s Best Cinnamon Peanut Butter. As we all know, Betsy loves her unique and super tasty PB&Js; But, a PB&J in a breakfast smoothie bowl?  What an amazingly yummy idea!

Recipe Ingredients:

2 T Betsy’s Best Cinnamon Peanut Butter

1 T Chia Fruit Spread

2 T  granola

1 C fresh blueberries, raspberries and/or strawberries.

1 C almond milk

1/2 C vanilla greek yogurt

ice

Peanut Butter and Jelly Smoothie Bowl Recipe Directions:

Step 1: Place the almond milk, greek yogurt, fresh berries and some ice into your blender.

Step 2: Blend until smooth.

Step 3: Add the granola into one side of a large cereal bowl and pour the smoothie into the other side.  

Step 4:  Put the peanut butter and fruit spread on top of the smoothie and gently mix it in until swirled.

Step 5: If you have some extra fruit (blueberries our raspberries are great) place them on top.

Step 7: Enjoy your peanut butter and jelly smoothie bowl!!

Chocolate Chia Pudding

Chocolate Chia Pudding

With Betsy‘s chocolate chia pudding we go coco for chocolate and coconut!  This delicious and healthy dessert uses a gluten-free chocolate muffin from Soozy’s along with our delicious Toasted Coconut Cashew Butter Chia Pudding.  Such an amazing treat minus the guilt and it’s even vegan-friendly!

Recipe Ingredients:

2 T Betsy’s Best Toasted Coconut Cashew Butter

1 c coconut milk

1 c greek yogurt, plain

2 T honey or maple syrup

1/2 c mango

1 c spinach or 2 T Koyah Leafy Greens Booster powder

1/2 c chia seeds

Step By Step Chocolate Chia Pudding Recipe Directions:

Step 1Simply mix the ingredients together, and let them rest for a few moments.

Step 2: Stir the mix well with a fork every five minutes or so. At first, it’ll seem far too liquified, but over the course of thirty minutes the chia seeds will plump up, till the pudding resembles tapioca pudding.

To assemble the chocolate chia pudding parfait:

Step 1: Cut muffin in half and place the bottom half in a 4 oz mason jar.

Step 2: Slice strawberries thin and layer around the side of the jar.

Step 3: Layer with 1 T Betsy’s Best Toasted Coconut Cashew Butter and then add 1/4 Cup of chia pudding and top with the top of the muffin.

Step 4: Garnish with a dollop of Betsy’s Best and a strawberry.

Coconut Chia Pudding with Spinach and Mango

1 T Betsy’s Best Toasted Coconut Cashew Butter

1 c coconut milk

1 c greek yogurt, plain

2 T honey or maple syrup

1/2 c mango

1 c spinach or 2 T Koyah Leafy Greens Booster powder

1/2 c chia seeds

Step By Step Coconut Chia Pudding Recipe Directions:

Step 1In a small food processor or blender, combine 1/2 cup coconut milk, 1/2 cup Greek yogurt, 1 tablespoon honey or maple syrup and 1/2 cup mangos. Blend until smooth. Pour into a container and stir in 1/4 c of chia seeds.  Set aside to thicken.

Step 2: In the same blender or food processor, combine remaining 1/2 cup coconut milk, 1/2 cup Greek yogurt, 1 tablespoon honey or maple syrup, spinach or Koyah leafy greens booster, and Betsy’s Best Gourmet Coconut Cashew Butter. Blend until combined.  Remove and place in a separate container then stir in remaining 1/4 c chia seeds.

Step 3: Cover both containers and refrigerate 1-2 hrs or overnight. To serve, layer mango chia pudding and spinach coconut chia pudding in jars and top with fresh fruit.
