Recipe Ingredients:

1/4 Cup Betsy’s Best Cinnamon Peanut Butter

½ cup butter, I prefer salted, at room temp

1/4 cup packed light brown sugar

1/2 cup white granulated sugar

1 large eg

1 teaspoon vanilla extract

½ teaspoon baking soda

1 1/2 all-purpose flour

2 T coconut Oil

1 ½ cups semi-sweet chocolate chips

Peanut Butter Chocolate Chip Cookie Recipe Directions:

Step 1With an electric mixer or by hand, mix the butter, Betsy’s Best Cinnamon Peanut Butter, brown sugar and granulated sugar together.

* If you don’t use salted butter Betsy recommends adding 1 tsp of Himalayan pink salt.

Step 2: Add oil, vanilla, salt (if needed) and egg and stir to combine.

Step 3: In a separate bowl add flour and baking soda to combine and add to butter mixture and stir until incorporated with an electric mixer or by hand.

Step 4: Stir in the chocolate chips.

Step 5: Bake at 350 degrees for 10 minutes or until golden brown.

Step 6: Let cool and Enjoy!!!

½ cup oats

¼ tsp sea salt

¼ cup raw sugar

Step 1Combine Betsy’s Best Toasted Coconut Cashew Butter, oats, salt, sugar and vanilla.

Step 3: Melt chocolate chips.

Give your peanut butter oatmeal cookies a facelift! This fun and healthy baking recipe uses Betsy’s Best Gourmet Cinnamon Peanut Butter to make a rocking version of a classic cookie. For Betsy, this is her go-to cookie recipe and it is a hit every time!

Recipe Ingredients:

1 Cup Betsy’s Best Cinnamon Peanut Butter

3/4 cup raw sugar

3/4 cup brown sugar

1/4 cup butter, softened (or coconut oil)

1/2 tsp sea salt

2 eggs

1 tsp vanilla extract

1¼ tsp baking soda

3 cups rolled oats

6 oz. semi-sweet chocolate chips

1/2 cup chopped pecans (or walnuts)

Step By Step Peanut Butter Oatmeal Cookies Recipe Directions:

Step 1: Preheat oven to 350°F.

Step 2: Combine sugar, brown sugar, butter and salt in a large mixing bowl.

Step 3: Beat until creamy.

Step 4: Add eggs, vanilla and baking soda. Mix well.

Step 5: Add Betsy’s Best Cinnamon Peanut Butter and mix.

Step 6: Use a large spoon to stir in oats, chocolate chips and nuts.

Step 7: Place dough by heaping teaspoons onto a lightly greased cookie sheet, about 2 inches apart.

Step 8: Bake 8-10 minutes or until light gold on the edges.

Recipe Yield: approximately 4 dozen cookies.

As a different version of this all-natural  peanut butter oatmeal cookie recipe you could add white chocolate chips with cran-raisins, coconut with walnut, or peanut butter chips with crushed peanuts!
