Easy Eggless Eggnog with Toasted Coconut Cashew Butter

Betsy put a whole new twist on a holiday favorite!  Her easy eggless eggnog recipe is just as thick and delicious as the original recipe!  Swap the egg for plant protein with our Betsy’s Best cashew butters!   The toasted coconut flavors pair nicely with the chai spice!  Give it a blend and see how your holidays just got a little merrier! Eggnog Ingredients:

2 T Betsy’s Best Toasted Coconut Cashew Butter

1 c canned coconut milk, full fat or light

1/2 c almond or cashew milk (or coconut milk if you are wanting a thicker nog)

2-4 dates

1 tsp vanilla extract

1 Tbsp Bourbon maple syrup by Crown Maple Syrup (or use regular maple syrup and add 1 T  bourbon)

1/2 tsp chai spice (recipe here)

1/8 tsp sea salt

1 Tbsp Betsy’s Best Cardamom Cashew Butter (does contain honey, if avoiding honey use 2 T of the coconut cashew instead)

Step By Step Easy Eggless Eggnog Recipe Directions:

Step 1Add all ingredients to a blender

Step 2: Blend until smooth.  

Step 3: Enjoy your easy eggless eggnog!

Recipe Yield: Two servings.

Please note: Betsy’s Best Toasted Coconut Cashew Butter contains a drop of organic honey. If you are looking for an equally delicious vegan honey-free vegan eggnog you can substitute in Betsy’s Best Cardamom Cashew Butter. It is a honey-free and a bit more savory.

Baked Oatmeal with Gingerbread Almond Butter Topping

Funding delicious yet healthy Holiday desserts can be a real challenge.  Betsy, our in house registered Dietitian is also a gourmet foodie.  Her baked oatmeal with gingerbread cinnamon almond butter topping is a dessert you can enjoy guilt free.

Oatmeal Ingredients:

1 T Betsy’s Best Cinnamon Almond Butter

1/2 c rolled oats

1/4 tsp pure vanilla extract

1/2 tsp cinnamon

sweetener, such as 1 1/2 tbsp maple syrup or pinch stevia

1/4 cup applesauce (or pumpkin or mashed banana)

1/4 cup milk of choice, creamer, juice, or water

heaping 1/16th tsp pink salt

Gingerbread Topping:

3 T Betsy’s Best Gourmet Peanut Butter

3/4 tsp molasses

Dash nutmeg

Dash ginger

Step By Step Baked Oatmeal & Gingerbread Topping Recipe Directions:

Step 1Preheat oven to 375 degrees.

Step 2: Combine raw oats, spices, applesauce, Betsy’s Best Gourmet Almond Butter, salt, and liquid.

Step 3: Pour into a small baking pan, loaf pan, or 1-cup ramekin (or, for mini boats, two 1/2-cup ramekins).

Step 4: Cook for 15-20 minutes, or more until it’s firm.

Step 5: Meanwhile mix all of the gingerbread toppings in a bowl and stir to combine and set aside.

Step 6: When the baked oatmeal is finished cooking set your oven to “high broil” and coat the top of the oatmeal with the gingerbread topping and cook for 1-2 more minutes (or simply just bake longer, but broiling gives it a nice crust).

Step 7: Remove from oven and garnish with a gingersnap cookie and cool whip.

Step 8: Enjoy your baked oatmeal with gingerbread almond butter topping!

Optional topping: gingersnap cookie, cool whip, additional almond butter

Peppermint Candy Cane Cookie Dough Balls

Betsy’s peppermint candy cane cookie dough balls takes cookie dough to the next level by putting a little jingle in each bite! These Betsy’s Candy Cane Cookie Dough Balls aren’t just super delicious, they’re made with Betsy’s Best Gourmet Peanut Butter, which contains all-natural ingredients like chia seeds, cinnamon and honey.

Cookie Dough Ingredients:

1/2 Cup Betsy’s Best Cinnamon Sunflower Seed Butter

¼ cup rolled oats

¼ cup oat flour (or whole wheat pastry flour)

¼ tsp sea salt

1 Tbsp natural cane sugar

½ tsp pure vanilla extract

3 Tbsp pure maple syrup (or honey)

8 oz white chocolate

5 oz crushed candy cane

Yields: 22 bites

Step By Step Peppermint Cookie Dough Balls Recipe Directions:

Step 1Using a food processor, process Betsy’s Best and oats until reaching fine crumble. Add flour, salt and sugar, and process for a few seconds. Pour in maple syrup and vanilla, processing until combined. Dough should be sticky. Form into small balls and store in refrigerator.

Step 2: Microwave white chocolate for 1 minute on half power. Stir. Return to microwave and melt on half power for another 30 seconds. Remove balls from the fridge. Coat each with chocolate. Place crushed candy cane in a bowl and roll each ball to coat. Let cool on wax paper or cookie sheet.

Step 3: Enjoy peppermint cookie dough treats!!

Cashew Butter Strawberry Christmas Tree Treat

Oh Christmas Tree, Oh Christmas Tree Treat! How Could You Be So Tasty!!!  With fun and super yummy ingredients these Christmas Tree Treats will be a huge hit this Holiday season.  Made with strawberries, mini-chocolate muffins and Betsy’s Best Gourmet Cashew Butter with Cardamom, you’ll have to take pictures of your creation quickly because they won’t last for long.

Recipe Ingredients:

1/4 C Betsy’s Best Cardamom Cashew Butter

1 pt strawberries

1 package chocolate mini muffins

1/4 c coconut shreds

1 c icing

2 T matcha powder

Red and Green sprinkles for decorating

Powdered sugar for garnish

Step By Step Christmas Tree TreatsRecipe Directions:

Step 1Wash and dry the strawberries and cut off the tops with the green leaves. 

Step 2: Cut the bottom of the chocolate mini muffin so you can top it with a dollop of Betsy’s Best and then place the strawberry on top. 

Step 3: Meanwhile add the matcha powder to the icing and stir until a uniform green color. 

Step 4: Place in a pastry bag with a star tip. 

Step 5: Decorate the outside of the strawberry with the icing and add the sprinkles to look like ordainments.

Step 6: Lightly dust powdered sugar on top to look like snow.

Step 7: Enjoy your Christmas Tree Treats!

Chocolate Peppermint Smoothie

Smoothie Ingredients:

1 T Betsy’s Best Cinnamon Almond Butter

¼ avocado

1 ½ cup almond milk (or other milk alternative)

1 Tbsp chia seeds

8 drops liquid Stevia (or 4 dates)

6 ice cubes

Honey for garnish

Crushed candy cane for garnish

Step By Step Chocolate Peppermint Smoothie Recipe Directions:

Step 1: Add all ingredients except candy cane and honey to blender.

Step 2: Blend until smooth.

Step 3: Line rim of a glass with honey and coat with crushed candy cane.

Step 4: Enjoy your healthy holiday while sipping your chocolate peppermint smoothie!
