Peanut butter and chocolate eggs are a special Easter treat, but those calories definitely don’t make our bunny hop. This 4-ingredient Betsy’s Best Peanut Butter Easter Egg recipe is the perfect way keep kids happy and watch your waistline at the same time.
- ½ C Betsy’s Best Gourmet Peanut Butter (or substitute with Betsy’s Best Almond or Seed Butter)
- ¼ C powdered sugar
- ¼ C dark chocolate chips
- ½ tsp coconut oil
In a bowl, combine Betsy’s Best with powdered sugar. Stir until combined. Form mixture into six egg-shaped balls. Place in the freezer for 10 minutes.
Combine chocolate chips and coconut oil in a microwave-safe bowl. Melt in the microwave at 50% power for 1 minute. Stir. If still not melted, microwave for another 30 seconds.
Remove eggs from freezer. Coat each egg with the chocolate mixture. Let cool on parchment paper.
