Teriyaki Chicken and Faux Rice 

Who doesn’t like a fried rice dish, but with all the calories and fat is it really worth it? We took a carb loaded dish and gave it a twist using cauliflower in place of the rice. Marinate your chicken with our Betsy’s Best Gourmet Peanut Butter Teriyaki sauce and you will have a masterpiece for a meal!

Recipe Ingredients:

Faux Rice

3 1/2 Cups Cauliflower, grated

2 Whole Green Onion, Chopped

1 cloves Garlic, minced

2 Tbsp Soy Sauce, low sodium, gluten free

1/2 tsp Garlic powder

1 Whole Egg

2 Whole Egg Whites

1 Tbsp Oil, sesame or peanut

Chicken Teriyaki Marinade

6 Chicken Tenders

1/2 c Teriyaki sauce

2 T Betsy’s Best Cinnamon Peanut Butter

Step By Step Teriyaki Chicken Over Faux Rice Recipe Directions:

Step 1In a large ziplock bag, add Teriyaki sauce and Betsy’s Best Gourmet Peanut Butter.

Step 2: Close bag and massage until butter dissolves in sauce.

Step 3: Add chicken and place in refrigerator for 1 hr or overnight.

Step 4: Heat grill or oven and cook chicken until no longer pink.

Step 5: In a skillet, heat oil in bottom of pan and saute garlic and white part of onions for approximately 1 min.

Step 6: Add cauliflower and saute for approximately 5 min, stirring constantly.

Step 7: Add soy sauce, garlic salt, and green onion tops.

Step 8: Stir until mixed.

Step 9: Push mixture to side of pan.

Step 10: Add more oil if necessary, and scramble eggs in empty side of pan until done but still moist.

Step 11: Stir eggs into cauliflower and remove from heat and set aside.

Step 12: Place cooked chicken on top of faux rice and serve.

Step 7: Enjoy your teriyaki chicken over your healthy and tasty faux rice!

Sizzling Shrimp Sauté over Faux Rice 

With Betsy’s shrimp over faux rice recipe, you’ll take an Asian inspired dish and give it a twist! Grated cauliflower makes for a great rice substitution with a look and texture of white rice. Add the Asian flavor and you won’t miss the white starch carb laden fried rice. Betsy’s healthier version will knock your socks off! It’s another great way to use peanut butter in your kitchen!

 

Faux Rice Ingredients:

3 1/2 Cups Cauliflower, grated

2 Whole Green Onion, Chopped

1 cloves Garlic, minced

2 Tbsp Soy Sauce, low sodium

1/2 tsp Garlic powder

1 Whole Egg

2 Whole Egg Whites

1 Tbsp Oil, sesame or peanut

Shrimp Ingredients

1 lb shrimp, deveined and precooked

3 T rice vinegar

3 T Betsy’s Best Cinnamon Peanut Butter

3 T Sweet Chili Sauce

1/2 tsp soy sauce

Step By Step shrimp Over Faux Rice Recipe Directions:

Step 1In a small bowl mix together rice vinegar, 3 T Betsy’s Best Cinnamon Peanut Butter, sweet chili sauce, and soy sauce.

Step 2: Toss with shrimp and set aside.

Step 3: In a skillet, heat oil in bottom of pan and saute garlic and white part of onions for approximately 1 min.

Step 4: Add cauliflower and saute for approximately 5 min, stirring constantly.

Step 5: Add soy sauce, garlic salt, and green onion tops.

Step 6: Stir until mixed.

Step 7: Push mixture to side of pan.

Step 8: Add more oil if necessary, and scramble eggs in empty side of pan until done but still moist.

Step 9: Stir eggs into cauliflower and remove from heat and set aside.

Step 10: While pan is still hot add shrimp and cook until fully heated.

Step 11: Place rice on plate and top with shrimp. 

Step 12: Enjoy your shrimp over cauliflower faux rice!
