Recipe Ingredients:

2 T Betsy’s Best Cinnamon Peanut Butter

1 head cauliflower

8 skewer sticks

1/4 cup rice vinegar

1 tsp soy sauce

1 Tbsp sweet chili sauce

8 bamboo or metal skewers

Step By Step Chicken Skewers Peanut Butter Glaze Recipe Directions:

Step 1: Preheat oven to 350°F (may also grill).

Step 2: Stir vinegar, Betsy’s Best Cinnamon Peanut Butter, soy sauce and chili sauce together until combined.

Step 3: Thread chicken onto skewers and spread peanut butter glaze over chicken until fully covered.

Step 4: Cook 12-15 minutes in oven, or 12-15 minutes on grill/until no longer pink in the middle.

Almond Butter and Ginger Jelly Glazed Ham

Betsy’s Best ham glaze with ginger jelly is one of Betsy’s favorite Holiday dishes.  It’s unique gourmet twist will have your guests guessing the secret ingredient for this holiday glazed ham.  Sweet cinnamon almond butter compliments a ginger jelly to create a unique glaze that will be sure to amaze! Ingredients:

1/4 C Betsy’s Best Cinnamon Almond Butter

1 bone in pre-cooked ham (approx 8-10 lbs)

1/2 C  (4 oz) ginger jelly

2 Tbsp dijon mustard

1 C white wine (or apple juice)

2 granny smith apples

 

 

 

 

 

Step By Step Almond Butter and Ginger Jelly Glazed Ham Recipe Directions:

Step 1Using a sharp knife, score the ham on top at a diagonal every 3/4” and then repeat the other direction to form an “X” pattern on top.  Preheat oven to 325 degrees. Slice apples and place in the bottom of a large roasting pan.  In a bowl for the microwave or pot on the stove, melt the ginger jelly with the Betsy’s Best Gourmet Almond Butter.  Be careful not to burn and it only takes a few min to soften. Once melted remove from heat source and stir in dijon mustard.

Step 2: Place ham on roasting pan on top of the apples and brush half of the mustard mixture over the ham. Pour wine or apple juice in the bottom of the pan.  Bake uncovered as directed on the package (time will vary based on size).  Half way through, remove ham from the oven and brush on remaining glaze.  Remove from oven, allow ham to rest 15 minutes. Slice ham and pour any pan juices over the slices.

Cashew Butter Cardamom Doughnut Holes

Baking with cashew butter is tough to beat! You don’t always associate doughnuts as healthy, but we took a traditional fried doughnut recipe and gave it a facelift. Baking these doughnut holes is one way to reduce the fat without compromising flavor. The kick of cardamom makes these unique, and a fun way to enjoy breakfast.

Doughnut Hole Ingredients:

1 1/3 c all-purpose flour or gluten free baking mix
3/4 tsp baking powder
1/8 tsp baking soda
Pinch of sea salt
1/4 tsp ground cardamom, or to taste
1 T Betsy’s Best Gourmet Cashew Butter
1/4 c granulated sugar
4 T coconut oil, melted
1/2 c almond milk, room temp
1 large egg, room temp
1/2 tsp vanilla extract
soften butter or cooking spray

Doughnut Glaze Ingredients:

1 c powdered sugar or a bit more, as needed
1/2 tsp Betsy’s Best Cashew Butter
2-3 tsp almond milk

Preheat the oven to 350 degrees F

Using a cake pop mold, spray with cooking spray. Mix together the flour, baking powder, baking soda, salt, cardamom, and sugar. In a separate bowl, mix Betsy’s Best Cashew Butter, melted coconut oil, almond milk, egg, and vanilla, and stir until cashew butter is blended. Add flour mixture to butter mixture and stir until combined making sure not to over mix.

Spoon mixture into cake pop molds. Bake for about 8 minutes. Meanwhile, mix together the glaze and set aside. Add more almond milk if needed to thin glaze for easy coating. When doughnuts are done, remove from oven and allow to cool and transfer to a wire rack. Glaze the doughnuts and place back on wire rack until glaze hardens. Yield 16 doughnut holes

Skip the glaze if you want to reduce the sugar content, or lightly dust the doughnut holes with powdered sugar. You can also make these in a doughnut shape with a doughnut baking mold.

Apple Chicken Meatballs with Peanut Butter BBQ Glaze

Wow your taste buds with this chicken meatball dish. A unique combination of apples, feta, chicken and a smoky peanut butter BBQ glaze. These mini bite sized meatballs will be the hit of any party and are great to bring to a pot luck dinner!

 

Meatball Ingredients:

1/4 small tart apple, grated

1/4 small red onion, grated

1 tsp minced garlic (1 cloves)

1/4 tsp ground cinnamon

1/2 tsp smoked sea salt

1/4 tsp freshly ground black pepper

1 large egg white

1 pound ground chicken

1/4 c feta cheese

1/2 tsp Worcestershire sauce

1/4 tsp liquid smoke

Seed Butter BBQ Glaze Ingredients:

3 T Betsy’s Best Cinnamon Sunflower Seed Butter

1/2 c ketchup

T maple syrup or honey

1 tsp balsamic glaze

Pinch smoked sea salt

Drop of liquid smoke

Step By Step Apple Chicken Meatballs Recipe Directions:

Step 1Spray a mini muffin tin with cooking spray and set aside. In a large bowl, combine all ingredients to make the meatballs. Divide the mixture into quarters, then separate each quarter into 4 balls. Arrange meatballs on the prepared baking sheet. Bake for 15 minutes.

Step 2: Meanwhile, combine sauce ingredients and stir until sunflower seed butter dissolves into ketchup. Remove meatballs from oven and top with sauce, placing a dollop on top of each ball and return to oven for 5-10 min more, or until cooked through.

Step 3: Enjoy your meatballs!

Can’t get enough of the bite sized balls? Turn this recipe into a meatloaf by simply placing in a bread pan and increase your baking time to 40 minutes without the sauce. Remove after 40 min, add sauce and bake an additional 5-10 min or until done.
