Avocado and Kale Smoothie Bowl Recipe

Eat clean, eat green, and stay lean with this delicious cashew butter, avocado and kale smoothie bowl recipe.  We love blending vegetables and flavoring them in a way that makes them fun to eat!  This bowl could be consumed at breakfast, lunch or as a health snack!  We used a powdered kale from Koyah, but you could also use fresh kale or spinach for this blended bowl.

Recipe Ingredients:

1 T Betsy’s Best Toasted Coconut Cashew Butter

1 Frozen banana

1 Frozen avocado

1 scoop Koyah Kale Powder (or 1 cup fresh kale or spinach)

1 T chia seeds

Almond milk if needed to make the right consistency

Step By Step Avocado and Kale Smoothie Bowl Recipe Directions:

Step 1: Add all ingredients to a blender and blend.

Step 2: Pour into your favorite smoothie bowl.

Baked Kale Chips Coated With Cardamom Cashew Butter

Betsy’s Best baked kale chips are a healthy snack that pack a powerful punch!  Kale meets cardamom cashew butter in the most amazing baked chip  Try this healthy snack recipe and those unhealthy bagged potato chips will become a thing of the past!

Ingredients:

3 T Betsy’s Best Cardamom Cashew Butter

1 bunch kale, washed, dried and de-stemmed

1 T coconut oil

1/4 tsp sea salt

Step By Step Baked Kale Chips Recipe Directions:

Step 1In a bowl combine Betsy’s Best with coconut oil and salt. 

Step 2: Stir together and add kale. 

Step 3: Break kale into large pieces. 

Step 4: Place either in dehydrator at 120 degrees for 12-24 hrs or place in oven at 250 degrees for 8-10 min or until crispy.

Step 3: Enjoy your tasty and healthy baked kale chips!!

This is delicious made with each of the nut butters, Sunflower Seed, Peanut, or Almond.  Add more cinnamon or nutmeg, sprinkle with hemp seeds, or add shredded coconut for some unique variations.  You will find that this remarkable kale chip will satisfy every sweet craving and replace it with a healthier alternative! Yield-5-6 cups.

Betsy’s Kale Granola Recipe

Who said kale was only for salads?  Take your kale on the go and add a twist of granola crunch to your greens!  Betsy’s best kale granola recipe is sure to replace your usual trail mix by adding a boost of healthy greens to your snack attack.  Feel good with this mix and enjoy every bite!

Ingredients:

3 T Betsy’s Best Cinnamon Sunflower Seed Butter

2 c gluten free oats

3 T honey or maple syrup

3 T raw sugar or coconut palm sugar

3 T chia seeds

1/4 tsp sea salt

1 T cinnamon

1 T vanilla extract

1 T coconut oil

3/4 c raisins, golden berries, goji berries, or cranraisins

1 C cashews or other nut

2 stalks of kale, stem removed, chopped

Step By Step Recipe Directions:

Step 1: Preheat oven to 325 degrees.

Step 2: In a large bowl combine honey, sugar, chia seeds, Betsy’s Best, seal salt, vanilla, cinnamon, and coconut oil. 

Step 3: Stir to combine. 

Step 4: Add oats and kale and stir to coat. Line cookie sheet with wax paper and spread oat mixture on baking sheet and bake at 350 degrees for 7 min. 

Step 5: Take spoon and toss around oat mixture and return to oven for another 7 minutes and watch to make sure it doesn’t burn. 

Step 6: Remove and cool.  Add nuts and dried fruit and store in an airtight container.

Step 7: Enjoy your kale granola as you go and go!
