Betsy’s Cinnamon Peanut Butter Dip

Betsy’s cinnamon peanut butter dip is the best choice if you’re looking for a healthy treat for the family to enjoy!  This high protein bean dip is the perfect combo with fresh cut veggies.  The sweet and savory combo goes well together and is the perfect appetizer for any party! Trust Betsy, you’ll taste the difference!

Recipe Recipe Ingredients:

1 T Betsy’s Best Cinnamon Peanut Butter

1 can white beans, drained

4 pitted dates, soaked for four hrs and then drained

1 T mellow white miso or 1/8 tsp sea salt

1 1/2 tsp cinnamon

1/4 c water

Step By Step Cinnamon Peanut Butter Dip Recipe Directions:

Step 1: Place all ingredients except for the water in a food processor or blender. 

Step 2: Pulse to combine and then blend until smooth. 

Step 3: Drizzle with water until the dip is super smooth; you may need a few tablespoons extra water as you go along.

Step 7: Enjoy your homemade cinnamon peanut butter dip on your favorite veggies!!

Note From Betsy: If you don’t use my gourmet peanut butter, the dip will most likely be less flavorful.

PB&J Gourmet Banana Bites

With these PB&J gourmet banana bites, you forgo the bread and use bananas instead!!!  A blissful bite of these PB&J creations will have you reaching for more!  They are great at breakfast, a grab and go as a snack, and if frozen a dessert!  There are so many ways to eat these gourmet bites!!!

Recipe Ingredients:

2 TBS Betsy’s Best Cinnamon Peanut Butter

1 Banana

1 T Jam

Toothpicks

Step By Step PB&J Banana Bites Recipe Directions:

Step 1: Slice banana into 1/4 circles. 

Step 2: Add a dollop of Betsy’s Best Gourmet Peanut Butter to one slice and a dollop of your favorite jam to the other. 

Step 3: Add a toothpick to secure and either eat or freeze! 

Step 4: Enjoy!

Peanut Butter Banana Popsicle

Betsy’s peanut butter covered frozen banana popsicles are a healthy dessert treat. As the temperature increase, cool treats beat the summer heat! We love these healthy frozen banana pops for a delicious treat that is not only healthy, but fun to make with kids.

Recipe Ingredients:

3 T Betsy’s Best Cinnamon Peanut Butter

bananas, peeled and cut in half

2 T coconut oil

1 c of toppings such as: Cocoa Krispies, shredded coconut, sprinkles or cacao nibs

8 popsicle sticks

 

 

 

Step By Step Peanut Butter Banana Popsicle Recipe Directions:

Step 1Place popsicle stick in the base of the banana that was cut in half.

Step 2: Put bananas on wax paper on a cookie sheet and place in the freezer for at least 2 hrs. In a small saucepan, add Betsy’s Best and coconut; on low heat melt oil and Betsy’s Best together.

Step 3: Remove from heat.

Step 4: Place toppings individually on its own plate.

Step 5: Take bananas from the freezer and dip one at a time into Betsy’s Best mixture, then roll in topping and place back on wax paper.

Step 6: Once finished with each banana store in freezer in an airtight container

Step 7: Enjoy your frozen banana popsicles!

Hummingbird Cupcakes with Almond Butter Streusel Topping

These almond butter hummingbird cupcakes are a real treat. Sweet as can be, but healthy at the same time. All natural sweetness comes from fruit and honey, while powerful protein from almonds balances out this morning muffin. This muffin will have you humming all morning! We know you’ll #TasteTheDifference!

Ingredients:

1 T Betsy’s Best Cinnamon Almond Butter

1 1/2 C blanched almond flour

1/2 tsp salt

1/2 tsp baking soda

1/2 tsp vanilla

1 tsp cinnamon

3 eggs

1/4 C honey

2 T coconut oil, melted (any nut or vegetable oil will work)

1 C smashed ripe bananas, about two bananas

1 C crushed pineapple, drained

1 T chia seeds

Step By Step Hummingbird Cupcakes Recipe Directions:

Step 1: Preheat oven to 325 F.

Step 2: In a large bowl, combine almond flour, salt, baking soda, chia seeds, and cinnamon.

Step 3: In a separate bowl, mix together eggs, golden syrup, vanilla, Betsy’s Best, and oil.

Step 4: Mix bananas and pineapple into the wet ingredients.

Step 5: Stir wet ingredients into the dry ingredients. Set aside.

 Step 6: Enjoy the hummingbird cupcakes!

2 T Betsy’ Best Gourmet Almond Butter

1/2 c brown sugar

1/2 c gluten free flour blend

1/2 c oats

1/2 tsp vanilla

pinch sea salt

2 T coconut oil

Cupcake Streusel Topping Directions

Step 1: Add all ingredients to bowl and stir with a fork until crumbled.

Step 2: Divide batter evenly between 14 cupcake liners (liners should be filled almost to the top) and add streusel topping.

Step 3: Bake for 20 minutes or until a toothpick comes out dry.

Yield : 12 cupcakes

This almond butter hummingbird cupcake with streusel topping recipe can also be baked as a small cake or bread loaf. It can also be made into mini muffins for small bites of a delicious treat!
