Sassy Salad with Peanut Sauce

A healthy salad with a kick! The peanut sauce is truly unique thanks to Betsy’s Best Gourmet Peanut Butter. Serve with chicken or salmon for some extra protein or to make it a full meal.

  • 1 package/container lettuce of choice
  • ½ cup shredded carrots
  • 2 Tbsp chopped nuts of choice
  • ½ cup red sweet pepper, thinly sliced
  • ½ cup Betsy’s Best Gourmet PeanutAlmond or Seed Butter
  • 3 Tbsp water
  • Juice of ½ lemon
  • 1 Tbsp vinegar
  • 2 Tbsp gluten-free soy sauce (or tamari sauce)
  • 1 Tbsp sugar (or honey)
  • 1 tsp ginger, minced
  • 1 Tbsp sesame oil
  • 1 tsp Sriracha chili sauce

Add lettuce to large salad bowl. Add carrots, nuts and peppers to salad and toss to combine. Set aside.

Peanut Sauce:

In a bowl, whisk together Betsy’s Best and water. Add remaining wet ingredients and whisk well. Add sugar, ginger and Sriracha until incorporated. Sauce consistency should be not too thick or too runny. Pour peanut sauce over entire salad and toss to distribute evenly. Serve immediately.

1 small piece ginger (¼-inch), sliced

1 small clove garlic, minced

1/8 cup tahini (sesame seed paste)

1/8 c natural rice vinegar

1 ½ Tbsp soy sauce

1 Tbsp sesame oil

1/2 Tbsp sugar

¼ cup warm water

1 pkg kelp noodles

½ small seedless cucumber, cut into 2-inch julienne strips

½ cup lightly packed fresh cilantro leaves, torn

½ small red bell pepper, cut into 2-inch julienne strips

2 scallions, thinly sliced on the diagonal

1 cup shredded carrots

½ cup chopped peanuts (or slivered almonds)

Step 1Mince ginger and garlic in a food processor.

Step 2: Add Betsy’s Best, tahini, vinegar, soy sauce, sesame oil, and sugar.

Step 3: Process until combined.

Step 4: Add water and process until smooth.

Kelp Noodle Directions

Step 1: Rinse and drain kelp noodles.

Step 2: Toss with peanut sauce until evenly coated.

Step 3: Add cucumber, cilantro, bell pepper, scallions, and carrots; toss to combine.

Step 4: Sprinkle with peanuts and serve immediately.

How To Make Carrot Noodles

Here’s how to make carrot noodles:

Step 1: Wash and peel 5 large carrots

Step 2: Use a spiral slicer and slice all of the carrots into long strands with thickness similar to linguini.

Step 3: Place the carrot noodles in a saute’ pan with 1 tsp of virgin olive oil.  Cook at medium heat until the carrots are tender,

Note: You can season the carrot noodles with garlic, salt and pepper, or other spices.

Betsy’s Recipe: Spiraled Carrot Noodles with Sunflower Seed Butter Ginger Sauce


  • 5 large carrots peeled and spiraled into noodles
  • 1/3 C roasted cashews
  • 2 T fresh cilantro finely chopped

FOR THE Sunflower Seed Butter Ginger SAUCE:

  • 2 T Betsy’s Best Gourmet Sunflower Seed Butter
  • 4 T coconut milk
  • 2 T soy sauce
  • 2 cloves large garlic finely chopped’
  • 1 T fresh ginger peeled and grated
  • 1 T lime juice
  • sea salt to taste


Combine all ingredients in a small bowl and mix together until smooth and creamy or place in a blender and blend.
