Peppermint Candy Cane Cookie Dough Balls

Betsy’s peppermint candy cane cookie dough balls takes cookie dough to the next level by putting a little jingle in each bite! These Betsy’s Candy Cane Cookie Dough Balls aren’t just super delicious, they’re made with Betsy’s Best Gourmet Peanut Butter, which contains all-natural ingredients like chia seeds, cinnamon and honey.

Cookie Dough Ingredients:

1/2 Cup Betsy’s Best Cinnamon Sunflower Seed Butter

¼ cup rolled oats

¼ cup oat flour (or whole wheat pastry flour)

¼ tsp sea salt

1 Tbsp natural cane sugar

½ tsp pure vanilla extract

3 Tbsp pure maple syrup (or honey)

8 oz white chocolate

5 oz crushed candy cane

Yields: 22 bites

Step By Step Peppermint Cookie Dough Balls Recipe Directions:

Step 1Using a food processor, process Betsy’s Best and oats until reaching fine crumble. Add flour, salt and sugar, and process for a few seconds. Pour in maple syrup and vanilla, processing until combined. Dough should be sticky. Form into small balls and store in refrigerator.

Step 2: Microwave white chocolate for 1 minute on half power. Stir. Return to microwave and melt on half power for another 30 seconds. Remove balls from the fridge. Coat each with chocolate. Place crushed candy cane in a bowl and roll each ball to coat. Let cool on wax paper or cookie sheet.

Step 3: Enjoy peppermint cookie dough treats!!

Is any drink more festive for the Holidays than a chocolate peppermint martini?  Betsy doesn’t think so. Martini Ingredients:

1 tsp Betsy’s Best Cinnamon Almond Butter

1 oz vanilla vodka

1 oz Bailey’s Irish cream

1 oz Kahlua or other coffee flavored liqueur

1 oz almond milk

drop peppermint extract

melted white chocolate for rim

crushed peppermint candy

Step By Step Chocolate Peppermint Martini Recipe Directions:

Step 1: Coat rim of glass in white chocolate and dip in crushed peppermint.

Step 2: Mix all liquids into a martini shaker with ice and shake.

Step 3: Make sure to shake hard enough to mix the almond butter into the liquids.

Step 4: Strain and serve!

Holiday Peanut Butter & Peppermint Cookies

Holiday Peanut Butter & Peppermint Cookies

Be Santa’s hero! We’re sure the jolly old elf will be very happy if you leave homemade Peanut Butter & Peppermint Cookies along with a glass of Betsy’s almond milk.  They are really good so make some extras for family and friends.

Cookie Ingredients:

  •  1 cup butter, softened
  • 1 cup Betsy’s Best Gourmet Peanut Butter
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 3 eggs
  • 4 cups all-purpose flour or gluten free flour blend
  • 2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 1 cup peppermint chips
  • 1/4 cup granulated sugar for coating

Recipe Instructions:

Preheat oven to 375 degrees F.

Combine the butter, Betsy’s Best, sugar, and brown sugar together in a bowl and mix with a mixer until combined and creamy. Add vanilla and eggs, one at a time, mixing well after each one. Set aside.

In a separate bowl mix the flour, baking soda and salt together. Add to peanut butter mixture in mixing bowl and stir until completely combined. Add the peppermint chips.

Roll the dough into 1” balls and in a separate bowl with the sugar, roll dough to coat. Place balls on a non-stick cookie sheet and using the bottom of a glass, flatten each ball.

Bake for 8-9 minutes. These cookies will remain soft and be careful not to over cook them. Remove from oven and move to a wire rack to cool. Yield: 24 cookies
