Chicken Salad Stuffed Tomatoes

There is nothing “stuffy” about Betsy’s Best chicken salad stuffed tomatoes. Reinvent the traditional chicken salad and give it a kick with your favorite Betsy’s Best Gourmet Nut or Seed Butter. Stuffed in a juicy tomato keeps it not only healthy but a beautiful presentation to a traditional dish.

Stuffed Tomato Ingredients:

2 T Betsy’s Best Cinnamon Almond Butter

6 oz. chicken, shredded (or chopped hard-boiled eggs, tuna, tofu or walnuts)

¾ cup boiled or canned pinto beans, rinsed and drained

½ cup plain Greek yogurt

2-3 Tbsp honey mustard

½ tsp cumin

½ tsp chili powder

½ tsp paprika

1/8 tsp cayenne or chipotle chili pepper

Salt and pepper, to taste

3-5 small tomatoes (or head of lettuce/loaf whole-wheat bread)

Step By Step Chicken Salad Stuffed TomatoesRecipe Directions:

Step 1Mix all ingredients except tomatoes in a large bowl.

Step 2: Spoon into airtight container and put in refrigerator.

Step 3: Cut a small circle in top of tomato and remove.

Step 4: Scoop out inside of tomato and discard.

Step 5: Stuff tomato with refrigerated filling. Repeat to stuff other tomatoes.

Idea! Can also be served over a bed of lettuce or as a sandwich on whole-wheat bread.

Betsy’s Best Brussels Sprout Chopped Salad

Betsy's Brussel Sprout Chopped Salad Recipe Brussel sprouts are the comeback veggie of the century!  That’s right! Every chef is placing these once forgotten sprouts on their menu.  Now you can enjoy them at home with Betsy’s delicious Brussel Sprout Chopped Salad recipe. After tasting this salad you’ll ask “Why does this recipe taste so good?” Well, it is no longer a secret. A Betsy’s Best Gourmet Nut Butter takes this recipe over the top! Brussels Sprout Chopped Salad Ingredients

  •  2 hard boiled eggs, peeled
  • 1 pound of Brussels sprouts, shredded
  • ⅓ cup toasted walnuts, chopped
  • ½ cup dried or fresh cranberries
  • 1-2 ounces goat cheese, crumbled

 Dressing Ingredients

  •  2 tablespoons apple cider vinegar
  • ¼ cup olive oil
  • 1 teaspoon honey
  • 1 tablespoon Betsy’s Best Cashew Cardamom Butter
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic, minced
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper, more if needed

Recipe Instructions Chop the eggs into tiny pieces. Place in a small bowl and set aside. Make the dressing by placing apple cider vinegar, mustard, garlic, Betsy’s Best, salt and pepper in a jar and stirring with a fork to combine. Add the olive oil to the jar, cover tightly and shake the jar until everything is well combined. (You could also do this in a blender or in a bowl.) Add the toasted walnuts, cranberries and half of the chopped eggs to the Brussels sprouts and drizzle with the dressing. Gently toss until combined. Let the salad sit at room temperature until the sprouts slightly soften and the flavors combine, about 15 minutes.Toss the salad again to redistribute the dressing. Taste and season with salt and pepper as needed. Transfer to a serving dish, top with the remaining eggs and crumbled goat cheese.

Salad Ingredients:

2 T Betsy’s Best Cardamom Cashew Butter

2 1/2 Ounces Manchego Cheese, matchstick

3 Whole Green Apples, matchstick

10 cranberries

1 1/2 Tbsp Chives, chopped

3 Tbsp Olive Oil

1/8 Cup Shallots

1 Tbsp Lemon Juice

1/2 Tbsp Cider Vinegar

1 tsp Lemon Zest

1 Salt & pepper to taste

Step By Step Chive and Apple Salad Recipe Directions:

Step 1: Mix Manchego, apples and chives in a bowl.

Step 2: Add cranberries to the apple salad 

Step 3: Mix all other ingredients together until Betsy’s Best Gourmet Cashew Butter is dissolved or blend in a blender. 

Step 4: Pour over apple mixture and gently toss. 

Step 5: Serve right away. 

Step 6: Enjoy your apple salad!

Honey Mustard Almond Butter Dressing

Dressing Ingredients:

3 T Betsy’s Best Cinnamon Almond Butter

3 Tbsp water

2 Tbsp freshly squeezed orange juice

1 Tbsp stoneground mustard

1 Tbsp olive oil (or flax/almond oil)

½ Tbsp raw honey

¼ tsp sea salt

½ tsp garlic

1 Tbsp chia seeds

Step By Step Almond Butter Dressing Recipe Directions:

Step 1: Puree all ingredients in blender except for chia seeds.

Step 2: Add chia and stir by hand.

Step 3: Store in airtight container for up to 2 weeks in the refrigerator. 

Step 4: Enjoy your almond butter dressing and salad!

Yields 1/2 cup.
