With Betsy’s peanut butter and jelly banana bunny wraps you can toss the bread and use veggies instead, optimize your diet and go green! Step 1: Take a collard green leaf and with a sharp knife slice down the stem from end to top of leaf to make it thinner so it is easier to wrap.
Step 2: Place banana in the center of the collard so it is right on top of the stem from one end to the other.
Step 3: Add nut or seed butter on one side of the banana and the jam on the other.
Step 4: Start from the jam end and fold over the banana and start to roll towards the peanut butter end.
Step 5: You can eat whole or slice in bite size pieces! Enjoy!

Known as the All-American food and probably the most popular sandwich combo with kids, the peanut butter and jelly (aka PB&J) sandwich is still a winner. I remember this as the first meal I learned to prepare as a child, and I am sure many of you share the same story.
In fact the PB&J sandwich was the inspiration behind developing the Betsy’s Best brand. My daughter was a picky three-year old, and she refused to eat the all-natural peanut butter I’d bring home from the store. As a frustrated mother and unsure of what she would take to school, the hunt began for a nut butter she would eat. No jar I brought home would temp her taste buds. Out of desperation to create a peanut butter and jelly sandwich she would enjoy, Betsy’s Best peanut butter was developed. Now it is shared by all….including my daughter.
Even though I am grown up now, I am still in love with my childhood favorite, a peanut butter and jelly sandwich. I know others agree. Some foods you just don’t grow out of. Heck, even many National Basketball Association players enjoy a PB&J sandwich before games! However I discovered that my taste buds matured as an adult, and I’m finding really creative ways to enjoy my favorite combo.
This summer I want to celebrate and shed light back on the peanut butter and jelly sandwich that we all loved as children.

I encourage you to put on your thinking caps and think outside the box on some creative ways to enjoy PB&J. Try a different nut butter or even a seed butter. To make a crazy jelly combo, add bacon or herbs and seasonings for a real twist.

Are you wondering “what is an unwich?” Bread-less sandwiches, known as an “unwich”, are a new way to make your meals less guilty. An unwich is where you forgo the bread and use veggies instead. Are you nuts? A sandwich isn’t a sandwich without the bread…or is it?
Reasons to Try an Unwich:
It’s time to take that sandwich and make it healthier for you. No matter how you stuff it, wrap it, or slap it together, tossing the bread and using veggies instead gives you an extra serving of greens and can help you shed some of those extra pounds left over from the winter.
Here are some great bread replacements:
Boston bib lettuce for a wrap
Collard green leaf for a wrap
A mock bun with a Portobello mushroom
Hollow out a cucumber or zucchini to make an unwich boat
Use cucumber discs for a mini appetizer dish
Stuff a tomato or pepper with your favorite spread.

A perfect treat to beat the heat! Betsy’s white chocolate dipped peanut butter ice cream sandwiches are not only pretty but delicious too! These don’t have to just be for 4th of July, but can be dipped in any sprinkle combo you want!
Step 2: Combine brown sugar, Betsy’s Best Gourmet Peanut Butter, egg, baking soda and stir until mixed.
Step 3: Fold in the chocolate chips.
Step 4: Place on un-greased cookie sheet or parchment paper and bake for 8-10 min.
Step 5: Once removed allow to cool and place in a freezer until hard.
Step 6: When ready to assemble the sandwiches, melt white chocolate in a microwave safe bowl at 50% for 60 seconds.
Step 7: Stir and microwave again at 50% for 30 seconds until melted.
Step 8: Set aside to cool.
Step 9: In 2 separate bowls place red sprinkles in one and blue sprinkles in another.
To assemble: Place ice cream between the 2 cookies and dip in white chocolate. Dip the bottom of the white chocolate dipped cookie in the blue sprinkles and then set on a wax paper to cool. With a spoon take some of the white chocolate and cover the section you want to turn red and sprinkle with the red sprinkles. As soon as the sprinkles are applied place back in the freezer.
Step 10: Enjoy your patriotic peanut butter ice cream sandwiches!
