Coconut Chia Pudding with Spinach and Mango

Cha-Cha-Cha coconut chia pudding please!  A fun and refreshing dessert that has 1 serving of vegetables and 1 serving of fruit plus all of the benefits of chia seeds! Featuring our Toasted Coconut Cashew Butter you’re sure to #TasteTheDifference.  A great way to enjoy all of those functional food benefits!

Recipe Ingredients:

1 T Betsy’s Best Toasted Coconut Cashew Butter

1 c coconut milk

1 c greek yogurt, plain

2 T honey or maple syrup

1/2 c mango

1 c spinach or 2 T Koyah Leafy Greens Booster powder

1/2 c chia seeds

Step By Step Coconut Chia Pudding Recipe Directions:

Step 1In a small food processor or blender, combine 1/2 cup coconut milk, 1/2 cup Greek yogurt, 1 tablespoon honey or maple syrup and 1/2 cup mangos. Blend until smooth. Pour into a container and stir in 1/4 c of chia seeds.  Set aside to thicken.

Step 2: In the same blender or food processor, combine remaining 1/2 cup coconut milk, 1/2 cup Greek yogurt, 1 tablespoon honey or maple syrup, spinach or Koyah leafy greens booster, and Betsy’s Best Gourmet Coconut Cashew Butter. Blend until combined.  Remove and place in a separate container then stir in remaining 1/4 c chia seeds.

Step 3: Cover both containers and refrigerate 1-2 hrs or overnight. To serve, layer mango chia pudding and spinach coconut chia pudding in jars and top with fresh fruit.

6 Ways To Add More Vegetables To Your Diet

Smoothies: What better way to get your greens vegetables than to drink them! Mask the taste with fruit and you won’t even know you are eating spinach. Here is an easy green recipe: 1/2 banana, 1/2 c blueberries, 1 c almond milk, 1 T Betsy’s Best, 1 T chia seeds, 3/4 c fresh spinach leaves. Omelets: Turn your breakfast into a veggie fest by adding spinach, arugula, beet greens, parsley or cilantro and salsa into your eggs for a delicious twist!

Grilled: Roasting veggies is one of the easiest ways to enjoy a flavorful dish. Grilled endive and radicchio are not commonly grilled foods but are flavorful companions to peppers, onions, and mushrooms.

Baked: Baking or roasting veggies is as easy as 1-2-3. Throw some kale on a baking sheet, spray with olive oil, sprinkle with sea salt and bake at 350 degrees for 10-15 min. You can also roast Brussels sprouts for a dish that is delish!

Shredded: When shredded finely, even tougher greens become easy to handle. You can shred these greens for a healthy garnish on mashed potatoes or mix them into your favorite salad.

Wrap them up!: Instead of using a tortilla, crunchy greens that contain a good amount of water, such as Swiss chard, bok choy, escarole, or romaine make fantastic wraps for a variety of fillings, ranging from roasted eggplant, tomatoes, onion, and garlic to teriyaki chicken with mandarin oranges.

So being creative is just half the fun….the other half is eating your creation! Think outside the box on ways to eat those green leafy vegetables and watch yourself as you get lean!

Apple and Spinach Salad with Sweet Seed Butter Dressing

A great spinach salad is the perfect summer meal. Whether you eat at home or at work, they are light and delicious on those hot days and fuel the body with nutrients that will keep you going during the longer daylight hours. We love to dress our salads for success and find creative ways to work our gourmet sunflower seed butter into a dazzling dressing.

Salad Dressing Ingredients:

1/4 Cup Betsy’s Best Cinnamon Sunflower Seed Butter

1 clove garlic

1/4 c water

3 T maple syrup

1/4 tsp cinnamon

pinch sea salt & pepper to taste

1 tsp chia seeds, add after blending

Step By Step Spinach Salad Recipe Directions:

Step 1Arrange spinach leaves in 2 bowls and top with celery, apples, and walnuts.

Step 2: Prep dressing ingredients and place in blender except for chia seeds.

Step 3: Blend until smooth. Stir in chia seeds and pour over salads.

Yield: 2 salads.

Recipe Suggestion:s Feel free to swap out a different lettuce or toss with other fruits or vegetables.

Once the dressing is placed in the refrigerator it will thicken and we love to use it as a dip for veggies!
