Betsy’s pork tenderloin with sunflower seed butter quinoa stuffing is a must try recipe! Toss the bread and use a gluten-free superfood stuffing instead!  A higher fiber and protein loaded stuffing will not only stuff your pork tenderloin, but fill your belly.  A flavorful combination of quinoa and Betsy’s Best Gourmet Sunflower Seed Butter makes this stuffing unique and an amazing compliment to the pork. You can serve the pork stuffed or keep the stuffing as a side dish.

Recipe Ingredients:

2 T Betsy’s Best Cinnamon Sunflower Seed Butter

1/4 C uncooked quinoa

1/2 C water

2 Tbsp grapeseed oil

1/2 onion, chopped

1 cloves garlic, chopped

1 small apples – peeled, cored and chopped

1/4 C raisins

2 Tbsp sunflower seeds

4 button mushrooms, chopped

2 Tbsp white wine

1 (1 pound) pork tenderloin

1 pinch ground cinnamon

1 pinch garam masala, or to taste

salt and ground black pepper to taste

Step By Step Quinoa Stuffing Recipe Directions:

Step 1: Cook the 1/4 c quinoa and 1/2 c water according to package directions.

Step 2: Heat the oil in a skillet and sauce the onion, garlic, apples, raisins, sunflower seeds, and mushrooms until the onion has softened and turned translucent. In a bowl combine the white wine and Betsy’s Best and stir to dissolve. Stir in the Betsy’s Best mixture, and cook another 1-2 min until some of the liquid has evaporated. Combine the apple mixture and quinoa until evenly mixed; set aside.

Step 3: Preheat an oven to 425 degrees F (220 degrees C).  Slice the tenderloin from the top to the bottom lengthwise maintaining one edge intact so you can open like a book. Open the two sides and place between two sheets of heavy plastic on a solid, level surface. Firmly pound the tenderloin with the smooth side of a meat mallet to a thickness of 1/2 inch. Season the tenderloin on both sides with cinnamon, garam masala, salt, and black pepper. Spoon the quinoa filling onto the tenderloin, then roll up and secure with kitchen twine or toothpicks. Place onto a roasting pan.  Roast in the preheated oven until the pork is no longer pink in the center, about 35 minutes. An instant-read thermometer inserted into the center of the filling should read 145 degrees F (63 degrees C). Cover with aluminum foil, and let rest for 10 minutes before slicing.

Step 4: Enjoy your quinoa stuffing with the pork tenderloin or as a side dish!

Are Sunflower Seeds Good For You?

Are Sunflower Seeds Good For You?

If you are wondering about the health benefits of sunflower seeds, Betsy Opyt, a registered Dietitian, has the answer.  It’s time to shed a little light on the bright and colorful sunflower. Known as one of the most colorful and largest flowers, this ray of sunshine provides seeds that meet many needs for the body.

Sunflower seeds are rich in:

  • Vitamin E,
  • Omega-3 fatty acids
  • Fiber
  • Protein
  • Antioxidants

Sunflower seeds help keep skin and nails healthy while also protecting the heart by reducing inflammation. The sunflower seed has a similar texture and flavor to peanuts and peanut butter, and, since nut butters can be an allergen to some, having a great tasting sunflower seed spread is a great alternative.

Try Betsy’s Best Cinnamon Sunflower Butter

People rave about Betsy’s Best Gourmet Sunflower Seed Butter—the creamy texture, crunch of chia, and hint of cinnamon make this spread stand out. If you haven’t tried a sunflower seed butter, or have tried another brand and weren’t impressed, then dig in for a pleasant surprise. Sunflower seed butters haven’t historically been the best selling spread, but due to recent consumer interest, sunflower seed spreads have seen a large growth this past year.

Betsy’s PB&J Cookie Bites (with Sunflower Seed Butter)

PB&J in a bite size portion is the perfect treat on the go!  Betsy’s mini peanut butter and jelly coolie bite is full of flavor and fun to eat. There is a twist, too! Instead of PB Betsy uses her cinnamon seed butter.  Be creative and try different flavors of jams and jelly and even try making it with our almond, cashew, or peanut butter!

Cookie Ingredients:

1/4 C Betsy’s Best Cinnamon Sunflower Seed Butter

1 1/4 c all-purpose flour or gluten free flour

1/4 tsp baking soda

1/2 tsp sea salt

1/4 c unsalted butter room temperature

1/4 c sugar

1/2 c light brown sugar packed

1 large egg room temperature

1 tsp vanilla extract

Mousse Filling Ingredients:

3 oz cream cheese softened

1/2 c Betsy’s Best Cinnamon Seed Butter Butter

1/2 c jam or jelly seedless

Step By Step PB&J Cookie Bites Recipe Directions:

Step 1: Preheat oven to 350°F. Spray a mini sized muffin tin with cooking spray and set aside.  Stir together flour, baking soda, and salt, set aside.  Beat butter and Betsy’s Best until smooth and add sugars and beat on med-high until pale and fluffy (approx. 2-3mins). Reduce speed and add egg and vanilla. Beat until combined and add flour mixture and mix until just combined. Using a small cookie scoop and scoop dough into muffin tins, press down to flatten slightly.

Step 2: Bake for 10-12 mins or until lightly browned and mostly set.  Remove from oven and immediately use the small cap of the vanilla to press firmly down in the center to create a well. Cool in pans for 10 mins, then place on wire rack to cool completely.

Peanut Butter Mousse Directions:

In a separate bowl, beat cream cheese and Betsy’s Best until smooth and place in refrigerator until ready to assemble.

Spoon a teaspoon of raspberry jam into each cookie cup.  Add the peanut butter mousse on top of raspberry jam and top with a dollop of jam as a garnish. Refrigerate until set (approx. 2 hours).  Serve cold and eat within 2-3 days. Or freeze and eat later on.

Betsy’s PB&J cookie bites are a hit at every party she brings them too.  Even better, all those kids with peanut allergies can eat them.  If peanut allergies aren’t an issue you can make them with Betsy’s Best Cinnamon Peanut Butter or Cinnamon Almond Butter!
