White Bean Turkey Chili with Cardamom Cashew Butter

Cool winter months call for warm white bean turkey chili to sooth the soul. This one is spiced up with unique healthy functional food ingredients like cinnamon and cardamom. Betsy’s Best Cashew Cardamom Butter gives it an extra kick with more protein. This creamy white bean turkey chili is so flavorful and delicious it warms the heart with health benefits!

Chili Ingredients:

2 T Betsy’s Best Cardamom Cashew Butter

2 clove garlic, minced

1 lb lean ground turkey

1 (4oz) can green chile peppers, chopped

1/2 T ground cumin

1/2 T dried oregano

1/2 tsp ground cinnamon
ground cayenne pepper to taste

2 (15 oz cans) cannellini beans, drained and rinsed, separate 1/2 c

2 c chicken broth

1 c shredded Monterey Jack cheese

Step By Step White Bean Turkey Chili Recipe Directions

Step 1: In a large pot over medium heat, combine the onion, garlic and ground turkey and saute for 10 minutes, or until turkey is well browned. Add the chile peppers, cumin, oregano, cinnamon, cayenne pepper to taste and white pepper to taste and saute for 5 more minutes.

Step 2: Add 1 1/2 cans of the beans and the chicken broth to the pot. Take 1/2 c beans with the 2 T Betsy’s Best and puree them in a blender or food processor. Add this to the pot along with the cheese. Stir well and simmer for 10 minutes, allowing the cheese to melt.

Oat and Almond Butter Ball Turkeys

Betsy’s Oat and Almond Butter Ball Turkeys are a super fun, kid-friendly Thanksgiving dessert recipe.  These cute bite-sized energy balls are decorated to look like a turkey and will be “gobbled” up by the whole family!  Prep the balls ahead of time and let the kids decorate them!  They are almost too cute to eat and make a fantastic centerpiece for your Thanksgiving table

Ball Ingredients:

1/2 C Betsy’s Best Cinnamon Almond Butter

1/2 c oats

1/4 c honey

1 tsp vanilla

1 T chia seeds

1 T hemp seeds

1/4 tsp sea salt

Step By Step Almond Butter Ball Directions:

 

Step 1: Combine all ingredients in a bowl and mix well

Step 2: Form into ball

Step 3: Place in the refrigerator to set

Yield:  8-10 balls

Decorating Ingredients:

 

1/2 c flax seed, whole

slivered almonds, divided into 3 separate baggies

Food colorings

Large pretzel sticks

Small pretzel sticks

Candy corn

Licorice, red pull apart strings

Candy eyes

1/2 C Betsy’s Best Cinnamon Almond Butter

Step By Step Decorating Directions:

 

Step 1In 3 separate baggies place about 1/4 of slivered almonds in each bag.

Step 2: Add 1-2 drops of food coloring of your choice and massage.  Set aside.

Step 3: Place the flax seed in a bowl ake the BB ball and roll to cover in the flax coating.

Step 4: Take large pretzel stick and cut to about 1 inch and place a small hole in the front of each ball with a drop of Betsy’s Best and place pretzel.

Step 5: Take the candy corn and wrap a small piece of the licorice over it. Place a drop of Betsy’s Best at the top of the pretzel facing the front and secure the candy corn and eyes.

Step 6: Place the smaller pretzels in the back of the ball to resemble the tail.

Step 7: Place the slivered almonds in the front of the small pretzels alternating the colors.

Peanutty Asian Lettuce Wraps

Peanutty is spot on when it comes to describing this asian lettuce wrap recipe, thanks to the rich flavor provided by Betsy’s Best Gourmet Peanut Butter. Made using delicious all-natural ingredients this recipe will keep the whole family healthy and happy.

Recipe Ingredients:

3 TBS Betsy’s Best Cinnamon Peanut Butter1

½ lb. lean ground turkey (or 2 cups walnuts, ground)

½ cup shredded carrot

2 Tbsp fresh ginger root, minced

4 garlic cloves, minced

1 can (8 oz.) whole water chestnuts, drained and chopped

4 green onions, chopped

½ cup fresh snow peas, chopped

1⁄3 cup reduced-sodium gluten-free Teriyaki sauce

¼ cup gluten-free Hoisin sauce

1 Tbsp rice vinegar

1 Tbsp sesame oil

12 bib lettuce leaves

Step By Step Peanut Butter Lettuce Wraps Recipe Directions:

Turkey version:

In large skillet, cook turkey and carrot over medium heat until meat is no longer pink and carrot is tender. Drain. Add ginger and garlic. Cook 1 minute longer. Stir in the chestnuts, onions, snow peas, Teriyaki, Hoisin, Betsy’s Best, vinegar and oil. Heat through. Divide mixture among lettuce leaves.

Walnut version:

Add walnuts to food processor and process on low until ground. Remove and place in large bowl. Add shredded carrots, ginger, garlic, chestnuts, onions and snow peas. Process on low to form chunks. Remove and combine with walnuts in bowl. Add Teriyaki, Hoisin, Betsy’s Best, vinegar and oil to blender and process until blended. Pour liquid into nut mixture and stir. Divide among lettuce leaves.

You’ll go nuts over these peanut Asian lettuce wraps.
