Cauliflower is making a comeback and while this cruciferous vegetable usually consumed raw or steamed, roasting makes for a unique dish. Consume as a side or turn into a snack, you will find this recipe keeps you coming back. it!

Recipe Ingredients:

1/4 Cup Betsy’s Best Cinnamon Peanut Butter

1 head cauliflower

2 Tbsp nutritional yeas

1 Tbsp hot water to thin (if needed)

½ tsp sea salt

 

Step By Step Recipe Directions:

Step 1: Preheat oven to 350°F.

Step 2: Cut cauliflower into bite-sized pieces

Step 3:Whisk together Betsy’s Best, nutritional yeast, water and salt.

Step 4: Toss with chopped cauliflower.

Step 5: Spread cauliflower on baking sheet.

Step 6: Roast 35-45 minutes.

Step 7: Enjoy!

Teriyaki Portobello Mushroom Burgers

Teriyaki Portobello Mushroom Burgers

Not only are these vegetarian teriyaki portobello mushrooms burgers a beautiful dish but they are also delish!  The Asian flavors blend well with the meaty flavor of the mushroom and provides a perfect alternative to the high fat/high calorie hamburger.  Shave off the calories and boost the fiber and nutrition with this swap and feel good about sinking your teeth into this delicious veggie burger!

Mushroom Burger Ingredients:

 4 Portobello mushrooms

4 Whole grain hamburger buns

1 Avocado

Alfalfa sprouts

 

Marinade Ingredients

2 T Betsy’s Best Cinnamon Peanut Butter

¼ cup tamari or soy sauce

1 T sesame oil

1 T honey

1 T rice vinegar

2 garlic cloves, minced

Step By Step Teriyaki Portobello Mushroom Burgers Recipe Directions:

(Reserve 2 T of marinade to mix with vegenaise for topping the burger)

Step 1: Wash your portobello mushroom caps and remove the stems. Place all of the teriyaki marinade ingredients into a mixing bowl. Whisk together until blended. Remove 2 T of marinade and mix in a small bowl with the mayo.  Set aside.

Step 2: Place mushrooms in a ziplock bag and pour marinade over mushrooms and allow to marinade from 30 min – 2 hrs. When ready to cook turn on your grill or grill pan on medium-high.  Place your mushroom caps on the grill with the gill side down.  Let them cook for about 4 minutes on the gill side down.  Then flip them and let them cook for another 4 minutes on the other side.  The mushroom caps are ready when the middle is tender enough for a fork to go through and the juices come out.  When mushrooms are ready, take off the grill and set aside to cool. When ready to eat place mushroom on bun and garnish with mayo, sliced avocado and sprouts.

Homemade Vegetarian Carrot Hot Dog

Trick your family with this healthy vegetarian hot dog swap and toss that wiener for something leaner!  This carrot dog is the healthiest replacement to a hot dog and has the same flavor and color as your all-American favorite ballpark dog.  Drizzle some ketchup and mustard and close your eyes when you take your first bite and be surprised at how good it is!

Recipe Ingredients:

1 T Betsy’s Best Cinnamon Peanut Butter

4 carrots

4 T vegetable stock

3 T tamari or soy sauce

1 garlic clove, sliced

1/2 in piece ginger, sliced

2 T red or white wine vinegar

2 tsp liquid smoke

3 tsp brown sugar

Step By Step Homemade Vegetarian Carrot Hot Dogs Recipe Directions:

Step 1: Simmer 4 carrots in boiling water for 8-10 min, then shock them in ice water. 

Step 2: While they are simmering combine the marinade ingredients. 

Step 3: Remove carrots from ice bath and place in a plastic bag and pour marinade over carrots and let sit overnight. 

Step 4: When ready to cook put 1 tsp oil in a pan over medium-high heat. 

Step 5: Add carrots and sauce for 10 min, drizzling with marinade every few minutes and turning regularly until cooked through.

Step 6: Enjoy your homemade carrot hot dogs!

Sassy Salad with Peanut Sauce

A healthy salad with a kick! The peanut sauce is truly unique thanks to Betsy’s Best Gourmet Peanut Butter. Serve with chicken or salmon for some extra protein or to make it a full meal.

  • 1 package/container lettuce of choice
  • ½ cup shredded carrots
  • 2 Tbsp chopped nuts of choice
  • ½ cup red sweet pepper, thinly sliced
  • ½ cup Betsy’s Best Gourmet PeanutAlmond or Seed Butter
  • 3 Tbsp water
  • Juice of ½ lemon
  • 1 Tbsp vinegar
  • 2 Tbsp gluten-free soy sauce (or tamari sauce)
  • 1 Tbsp sugar (or honey)
  • 1 tsp ginger, minced
  • 1 Tbsp sesame oil
  • 1 tsp Sriracha chili sauce

Add lettuce to large salad bowl. Add carrots, nuts and peppers to salad and toss to combine. Set aside.

Peanut Sauce:

In a bowl, whisk together Betsy’s Best and water. Add remaining wet ingredients and whisk well. Add sugar, ginger and Sriracha until incorporated. Sauce consistency should be not too thick or too runny. Pour peanut sauce over entire salad and toss to distribute evenly. Serve immediately.

Chicken Salad Stuffed Tomatoes

There is nothing “stuffy” about Betsy’s Best chicken salad stuffed tomatoes. Reinvent the traditional chicken salad and give it a kick with your favorite Betsy’s Best Gourmet Nut or Seed Butter. Stuffed in a juicy tomato keeps it not only healthy but a beautiful presentation to a traditional dish.

Stuffed Tomato Ingredients:

2 T Betsy’s Best Cinnamon Almond Butter

6 oz. chicken, shredded (or chopped hard-boiled eggs, tuna, tofu or walnuts)

¾ cup boiled or canned pinto beans, rinsed and drained

½ cup plain Greek yogurt

2-3 Tbsp honey mustard

½ tsp cumin

½ tsp chili powder

½ tsp paprika

1/8 tsp cayenne or chipotle chili pepper

Salt and pepper, to taste

3-5 small tomatoes (or head of lettuce/loaf whole-wheat bread)

Step By Step Chicken Salad Stuffed TomatoesRecipe Directions:

Step 1Mix all ingredients except tomatoes in a large bowl.

Step 2: Spoon into airtight container and put in refrigerator.

Step 3: Cut a small circle in top of tomato and remove.

Step 4: Scoop out inside of tomato and discard.

Step 5: Stuff tomato with refrigerated filling. Repeat to stuff other tomatoes.

Idea! Can also be served over a bed of lettuce or as a sandwich on whole-wheat bread.
