A perfect treat to beat the heat! These white chocolate dipped peanut butter & ice cream sandwiches are not only pretty but delicious too! These don’t have to just be for 4th of July, but can be dipped in any sprinkle combo you want!
Peanut Butter Ice Cream Sandwich Ingredients:
- 1 c Betsy’s Best Gourmet Peanut Butter with Cinnamon
- 1 c brown sugar
- 1 large egg
- 1 tsp baking soda
- 1/2 c chocolate chips
- Ice cream
- 1 c baking chips, white chocolate
- Red sprinkles
- Blue sprinkles
How to Make Your Homemade Dessert:
Heat oven to 350 degrees. Combine brown sugar, Betsy’s Best Gourmet Peanut Butter, egg, baking soda and stir until mixed. Fold in the chocolate chips. Place on un-greased cookie sheet or parchment paper and bake for 8-10 min. Once removed allow to cool and place in a freezer until hard.
When ready to assemble the sandwiches, melt white chocolate in a microwave safe bowl at 50% for 60 seconds. Stir and microwave again at 50% for 30 seconds until melted. Set aside to cool. In 2 separate bowls place red sprinkles in one and blue sprinkles in another. To assemble, place ice cream between the 2 cookies and dip in white chocolate. Dip the bottom of the white chocolate dipped cookie in the blue sprinkles and then set on a wax paper to cool. With a spoon take some of the white chocolate and cover the section you want to turn red and sprinkle with the red sprinkles. As soon as the sprinkles are applied place back in the freezer.
