Honey Mustard Cashew Butter Dressing

With Betsy’s cashew butter dressing you can take your honey mustard to the next level and put a spin on it this fall.  Spice up a vegetable wrap or use it to dress a salad or marinade for chicken.  My favorite it to add it to a apple slaw.  The possibilities are endless.  Whip up a batch and give it a try!

Ingredients:

2 T Betsy’s Best Cardamom Cashew Butter

1 T Vegenaise Mayo

1 T canned pumpkin

1/2 tsp apple cider vinegar

1 tsp dijon mustard

1/2 tsp honey

pinch sea salt

dash of ginger

Step By Step Cashew Butter Dressing Recipe Directions:

 

Step 1Mix all ingredients together until incorporated.  

Step 2: Spoon the dressing onto your favorite salad to taste,

Homemade Almond Milk Recipe

IIf you are savvy food label reader, here is why you need a homemade almond milk recipe. Most almond milk buyers are trying to lead a healthy lifestyle, but those ingredients on the almond milk containers are suspicious.  Carrageen, soy lethecin, and other preservatives – really????  Why deal with that when making your own almond milk at home is super easy, inexpensive, and even better tasting then the store bought varieties?

Ingredients:

2 heaping TBS Betsy’s Best Cinnamon Almond Butter

2 C filtered water

1 tsp Himalayan pink salt

Step By Step Homemade Almond Milk Recipe Directions:

Step 1: Blend all-ingredients in a blender until smooth.

Step 2: Store in refrigerator for up to 5 days.

Step 3: Shake before each use.

Step 4: Enjoy your delicious almond milk.

You can even change this homemade almond milk recipe into any kind of seed or nut butter milk. Use Betsy’s Best Sunflower Seed Butter, Toasted Coconut Cashew Butter, or Gourmet Peanut Butter for a delicious twist!  To make an even lower calorie version, add 1 more cup of filtered water.  Be sure to shake or stir before using as the chia seeds and almond pieces may settle to the bottom.  You may use a nut milk bag to remove these if you wish.

When you discover how easy it is to make almond milk you will never buy it at the store again!  I always use a cleaned out almond milk carton or glass beverage container to store my milk at home. With the hints of cinnamon, fiber from the chia seeds, and sweetness from the honey and almonds, this homemade almond milk recipe will be one you will savor and make again and again!

Almond Butter Protein Bars Recipe

Sweet and savory hits the spot with Betsy’s delicious almond butter protein bars recipe.  The smoky flavor of paprika pairs well with sweet cinnamon featured in our gourmet almond butter for a taste you’re gonna love! Plus, by making your protein bars homemade you know they’ll be preservative free.

Protein Bar Ingredients:

1 T Betsy’s Best Cinnamon Almond Butter

1 1/2 cups almonds, unsalted

1/2 cup pepitas or pumpkin seeds

1/4 cup millet, puffed millet, sesame seeds, or a mix

1 tablespoons chia seeds

1 tablespoon hemp seeds

1/2 teaspoon smoked paprika

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1/2 teaspoon sea salt

1/4 cup brown rice syrup

1/2 teaspoon liquid smoke

Step By Step Almond Butter Protein Bars Recipe Directions:

Step 1Preheat the oven to 350°F. Line an 8x8-inch baking pan with parchment and coat the bottom and sides with cooking spray.

Step 2: Roughly chop the almonds so there are some small pieces, but also some almonds that are left whole. Combine the chopped almonds, pepitas, millet, smoked paprika, garlic powder, onion powder, chia and hemp, and sea salt in a mixing bowl.  Stir and set aside

Step 3: Combine the brown rice syrup and Betsy’s Best in a small bowl and microwave for 30 seconds to make it easy to pour. Stir in the liquid smoke. Pour the syrup over the nut and seed mixture and stir until all the ingredients are evenly coated and quite sticky.

Step 4: Place in the baking pan with a spatula. Gently press the nut mixture evenly into the pan with the back of a spatula. Bake for 18 to 20 minutes.

Step 5: Slice the bars but leave out to harden another 1-2 hrs or place in refrigerator to speed up the process. Wrap and store up to 2 weeks in the refrigerator or freeze up to 3 months….if they last that long!

Step 6: Enjoy your almond butter protein bars

Hummingbird Cupcakes with Almond Butter Streusel Topping

These almond butter hummingbird cupcakes are a real treat. Sweet as can be, but healthy at the same time. All natural sweetness comes from fruit and honey, while powerful protein from almonds balances out this morning muffin. This muffin will have you humming all morning! Ingredients:

1 T Betsy’s Best Cinnamon Almond Butter

1 1/2 C blanched almond flour

1/2 tsp salt

1/2 tsp baking soda

1/2 tsp vanilla

1 tsp cinnamon

3 eggs

1/4 C honey

2 T coconut oil, melted (any nut or vegetable oil will work)

1 C smashed ripe bananas, about two bananas

1 C crushed pineapple, drained

1 T chia seeds

Step By Step Hummingbird Cupcakes Recipe Directions:

Step 1: Preheat oven to 325 F.

Step 2: In a large bowl, combine almond flour, salt, baking soda, chia seeds, and cinnamon.

Step 3: In a separate bowl, mix together eggs, golden syrup, vanilla, Betsy’s Best, and oil.

Step 4: Mix bananas and pineapple into the wet ingredients.

Step 5: Stir wet ingredients into the dry ingredients. Set aside.

 Step 6: Enjoy the hummingbird cupcakes!

2 T Betsy’ Best Gourmet Almond Butter

1/2 c brown sugar

1/2 c gluten free flour blend

1/2 c oats

1/2 tsp vanilla

pinch sea salt

2 T coconut oil

Cupcake Streusel Topping Directions

Step 1: Add all ingredients to bowl and stir with a fork until crumbled.

Step 2: Divide batter evenly between 14 cupcake liners (liners should be filled almost to the top) and add streusel topping.

Step 3: Bake for 20 minutes or until a toothpick comes out dry.

Yield : 12 cupcakes

This almond butter hummingbird cupcake with streusel topping recipe can also be baked as a small cake or bread loaf. It can also be made into mini muffins for small bites of a delicious treat!

Step 1: Start with 4 oz of yogurt and top with 1 T of jam and add 1/4 c of berries. 

Step 2: Add 1 T of Betsy’s Best and then add the rest of the yogurt, jam and berries and the rest of the Betsy’s Best. 

Step 3: Sprinkle with granola.

Step 4: Enjoy your fruit & yogurt parfait
