With Betsy’s cashew butter dressing you can take your honey mustard to the next level and put a spin on it this fall.  Spice up a vegetable wrap or use it to dress a salad or marinade for chicken.  My favorite it to add it to a apple slaw.  The possibilities are endless.  Whip up a batch and give it a try!

Ingredients:

2 T Betsy’s Best Cardamom Cashew Butter

1 T Vegenaise Mayo

1 T canned pumpkin

1/2 tsp apple cider vinegar

1 tsp dijon mustard

1/2 tsp honey

pinch sea salt

dash of ginger

Step By Step Cashew Butter Dressing Recipe Directions:

 

Step 1Mix all ingredients together until incorporated.  

Step 2: Spoon the dressing onto your favorite salad to taste,

Honey Mustard Almond Butter Dressing

Kick your salad up a notch with this delicious honey mustard almond butter dressing. Your salad is missing this, your carrots want to be dunked in it, and your chicken is praying for a marinade this good! This Honey Mustard Almond Butter Dressing recipe is so versatile, you’ll find yourself making it on a weekly basis.

Dressing Ingredients:

3 T Betsy’s Best Cinnamon Almond Butter

3 Tbsp water

2 Tbsp freshly squeezed orange juice

1 Tbsp stoneground mustard

1 Tbsp olive oil (or flax/almond oil)

½ Tbsp raw honey

¼ tsp sea salt

½ tsp garlic

1 Tbsp chia seeds

Step By Step Almond Butter Dressing Recipe Directions:

Step 1: Puree all ingredients in blender except for chia seeds.

Step 2: Add chia and stir by hand.

Step 3: Store in airtight container for up to 2 weeks in the refrigerator. 

Step 4: Enjoy your almond butter dressing and salad!

Yields 1/2 cup.

Homemade Honey Roasted Cashews

Sweet honey pairs with Betsy’s Best to create the most delicious roasted cashews to grace your lips!  Don’t buy honey roasted nuts at the store unless you want to consume maltodextrin and palm oil.  Instead crank up the oven and in just a few short minutes you can have your home filled with the delicious flavor of a roasted nut with hints of cinnamon and honey.  Hit the spot with this healthy snack and feel good about the foods you eat!  Feel free to change the nut for your personal preference, just don’t forget the Betsy’s Best Gourmet Almond Butter, it is the secret ingredient!!!

Ingredients:

2 c cashews (or other nut or seed)

1 T egg white

1 T honey

3 T sugar

1/2 tsp salt

1 T Betsy’s Best Gourmet Almond Butter

Directions:

Preheat you oven to 325 degrees.

In a small bowl, mix together the egg white, honey, sugar, Betsy’s Best and salt until the sugar and salt have dissolved.

Mix the cashews with the wet ingredients until they are covered.

Lay the cashews out on a non-stick surface in a single layer.

Roast for 12-15 minutes until the edges begin to darken slightly, taking care not to burn them.

Remove the cashews from the oven and let them cool completely.

Break the cashews apart and store them in an airtight container at room temperature.

For an added health benefit, before roasting the cashews, sprinkle a little chia seed, flax seed, or hemp seed into the mixture.  After cooled, turn into a delicious trail mix by adding, golden berries, goji berries, or other dried fruit!

Betsy’s Best recipe for Cardamom Baked Honey Glazed Chicken is super tasty and naturally healthy.  Made with Gourmet Cashew Butter with Cardamom it is also satisfying.  If you are looking to add real flavor to your diet while staying healthy give this recipe a try.

Chicken Ingredients:

2 T Betsy’s Best Cardamom Cashew Butter

4 Tbsp. honey

2 Tbsp. sherry or orange juice

1/8 tsp. freshly ground cardamom seeds

1/8 tsp. ground peppercorns

6 chicken breasts

3 Tbsp. coconut oil

1 lemon, thinly sliced

Salt and pepper

Step By Step Baked Honey Chicken Recipe Directions:

Step 1Preheat oven to 375 degrees Fahrenheit. Warm the honey to make it easier to combine with the sherry, Betsy’s Best Cashew Butter, ground cardamom, and peppercorns. Use this to marinade the chicken in a large bowl. Cover and allow to sit at room temperature for 30 minutes.

Step 2: Meanwhile, heat the coconut oil in a large frying pan at medium high heat.

Step 3: Sear the chicken, skin side down, until golden.

Step 4: Place the lemon slices in a roasting pan and lay the chicken pieces on top. Brush with the marinade and season generously with salt and pepper.

Step 5: Bake until done – about 20 minutes for breasts or longer for thighs, wings, and drumsticks. Remove from oven and allow to rest for about 10 minutes before serving.

Step 6: Pour drippings from the pan to make gravy. Serve over rice, mashed potatoes, or couscous.

Step 7: Enjoy your baked honey glazed chicken!!
