BHealthy and delicious are perfectly paired in this awesome Lemon Pie Smoothie recipe! We combined chia seeds, Betsy’s Best Gourmet Almond Butter and other super ingredients to make a smoothie that’s sure to become one of your favorites.

Ingredients:

1 T Betsy’s Best Cinnamon Sunflower Seed Butter

½ cup unsweetened almond milk (or other milk substitute)

½ cup filtered water

¼ cup raw dates, pitted and chopped (or 4 drops of liquid Stevia)

¼ cup lemon flesh (½ small lemon) peeled, seeds and membrane removed

1 medium banana (fresh or frozen)

1 Tbsp vanilla powder (optional)

1 Tsp vanilla extract

1 Tbsp chia seeds (or flax seed)

½ cup of spinach (or kale)

6 ice cubes

Step By Step Lemon Pie Smoothie Recipe Directions:

Step 1Place all ingredients in your blender.

Step 2: Blend until smooth

Step 3: Enjoy your lemon pie smoothie!

With a cool blast of superfoods, our healthy banana berry smoothie is the perfect treat after a great workout. Loaded with the incredible nutrition of three berries plus chia seeds and Betsy’s Best, it’s exactly what your body needs to recover.

Smoothie Ingredients:

1 T Betsy’s Best Cinnamon Sunflower Seed Butter

1 cup almond milk or milk alternative

½ frozen banana

½ cup frozen blueberries

1 Tbsp dried Acai berry powder

1 Tbsp Maqui berry powder

1 Tbsp chia seeds

1 Tbsp Cacao powder

5 drops liquid stevia (or 3 dates)

pinch of sea salt

Step By Step Banana Berry Smoothie Recipe Directions:

Step 1: Add all smoothie ingredients into the blender.

Step 2: Blend until smooth.

Chocolate Pumpkin Seed Clusters

Enjoy your chocolate pumpkin seed clusters for breakfast, on-the-go or as a sweet snack.  With Halloween around the corner, Betsy’s recipe is so tasty your kids may even prefer her clusters over all those high-sugar candy bars.  

Cluster Ingredients:

1/2 Cup Betsy’s Best Cinnamon Sunflower Seed Butter

½ cup honey

1 Tbsp cacao powder

¼ tsp sea salt

1/8 tsp cayenne pepper

1 cup pumpkin seeds (or seeds or nuts of choice)

2 Tbsp chia seeds

1 cup crispy rice cereal

1 cup gluten-free oats

½ cup dried fruit/berries of choice (optional)

Step By Step Chocolate Pumpkin Seed Clusters Recipe Directions:

Step 1: In a saucepan over medium-high heat, combine Betsy’s Best Cinnamon Seed Butter, honey, cacao, salt and pepper.

Step 2: Bring to simmer and cook 2 minutes. Remove pan from heat.

Step 3: Add pumpkin seeds, chia seeds, cereal, oats and dried fruit.

Step 4: Stir to combine.

Step 5: Place small drops on parchment paper and let cool before serving.

Step 6: Enjoy your chocolate pumpkin seed clusters!

Pumpkin Curry Soup with Seed Butter

What’s not to like about Betsy’s Best pumpkin curry soup? A simmering soup with scrumptious flavor, pumpkin and sunflower seed butter in an Indian curry makes a delicious combination. This filling pumpkin peanut butter curry soup recipe is loaded with beta carotene and fiber and will fill you up with flavor. We promise! You’ll taste the difference!

Soup Ingredients:

3 T Betsy’s Best Cinnamon Sunflower Seed Butter

2 Tbsp olive oil (or coconut oil)

1 small yellow onion, chopped (about ¾ cup)

2 garlic cloves, chopped

1 apple, cored and cubed

3 Tbsp Thai red curry paste

2 cups vegetable stock

1 cup water

1 (15 oz.) can pumpkin puree

Sea salt, to taste

Fresh black pepper, to taste

Fresh parsley for garnish

Step By Step Pumpkin Curry Soup Recipe Directions:

Step 1: Heat oil in large saucepan over medium heat. Add onion and cook until tender but not brown (about 5 minutes).

Step 2: Add garlic, apple and curry paste. Cook until the curry paste is very fragrant, stirring constantly, about 3 minutes.

Step 3: Increase to high heat. Add stock and water. Once the liquid boils, reduce heat to medium-low, and partially cover the pan.

Step 4: Let soup cook until apple is very tender, about 10 minutes.

Step 5: Remove pan from heat and let cool slightly. Stir in pumpkin and Betsy’s Best Gourmet Seed Butter.

Step 6: Working in batches, transfer the soup into a blender and puree until smooth, about 1 minutes.

Step 7: Season with salt and pepper.

Step 8: Garnish with parsley. 

Step 9: Enjoy!

Yields 4 servings.
